Cabbage salad with mayonnaise and thyme

Cabbage salad with mayonnaise and thyme stays crunchy, while the homemade mayonnaise brings it together without smothering it. The fresh thyme is subtle, and I choose a firm head with tightly packed leaves, then slice it into thin strips that stand out among spoonfuls of mayonnaise. Prep: 20 minutes. Cook: 0 minutes. Rest: 0 minutes. Total time: 20 minutes. Serves: 4. Approximately 160 kcal and 2 g protein per serving.
Ingredients
For the mayonnaise
- 1 raw egg yolk
- 1 cooked egg yolk
- 175 ml oil
- 1/8 teaspoon citric acid
- 1 tablespoon wholegrain mustard
For the salad
- 500 g chopped cabbage
- 2 g fresh thyme leaves
- 5 tablespoons homemade mayonnaise
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
Preparation
1. Wash the cabbage and chop it finely. Wash the thyme leaves and chop them finely. 2. Blend the raw egg yolk with the cooked one and 1 tablespoon of mustard. Gradually pour in 175 ml of oil in a thin stream, blending until the mayonnaise thickens. Add 1/8 teaspoon of citric acid. 3. Measure out 5 tablespoons of mayonnaise and mix it with the cabbage and thyme. Add 1 teaspoon of salt and 1/2 teaspoon of ground pepper, then serve.
Notes
For thin, even strips, cut the head into quarters and slice each piece; a very young cabbage may release more liquid. If you see liquid after chopping it, let it drain and add the mayonnaise just before serving. Store-bought mayonnaise can replace the homemade kind in the same amount; the salad contains egg and isn't suitable for people who avoid it. I mix it shortly before mealtime so the cabbage stays crunchy. I serve it with baked potatoes or grilled meat. Keep the salad in the refrigerator and eat it the same day, since the mayonnaise contains raw egg.
