To dry the vegetables, I used a fruit dryer, but you can easily use the oven. It is important to set the temperature to the lowest possible, around 80 degrees Celsius (150°F). If you have an oven that cannot be set to such a low temperature, leave the door open to prevent burning the vegetables or fruits. For example, to prepare asparagus powder, wash the vegetable well, removing any woody parts and potential impurities. If the asparagus is very thick, you can split it in two, but if you have thin stalks, you can leave them whole.
Once you have prepared the asparagus, place it on an absorbent towel and gently pat it to remove excess water. Then, arrange the slices on the trays of the drying machine, being careful not to overlap. Turn on the machine and let it run for a whole day or even two, depending on the amount of asparagus you have. Once the vegetables are completely dried and crispy, it’s time to turn them into powder.

The resulting product can be successfully used to add color and flavor to the sauces or pasta you prepare.
