Tortelloni with green beans and smoked mozzarella

Pasta/Pizza - Tortelloni with green beans and smoked mozzarella by Bianca O. - Recipia

Tortelloni with green beans are served hot, straight from the pan they were tossed in with the vegetables. The ricotta and spinach pasta is mixed in the pan with the beans, cherry tomatoes and smoked cheese, which softens on top. I cook them a little less than the package says, because I want them al dente. Prep: 15 minutes. Cooking: 12 minutes. Total time: 27 minutes. Servings: 4. About 450 kcal and 20 g protein per serving.

Ingredients

  • 2000 ml water
  • 1 teaspoon salt
  • 250 g tortelloni with ricotta and spinach
  • 250 g frozen green beans
  • 250 g cherry tomatoes
  • 1/2 red bell pepper
  • 4 garlic cloves
  • 50 g spring onion stalks
  • 200 g smoked mozzarella
  • 4 tablespoons olive oil
  • 1/2 teaspoon freshly ground red pepper

Preparation

1. In a large pot, bring 2000 ml of water to a boil with 1 teaspoon of salt. 2. Add the tortelloni and 250 g of frozen green beans to the boiling water. Cook for 4 minutes, or as long as the package says, then drain the pasta and the beans. 3. Wash the tomatoes and cut them in halves. Peel the garlic and slice it. Cut the spring onion stalks into rounds and the pepper into thin strips. 4. In a large non-stick pan, heat 4 tablespoons of olive oil. Sauté the garlic, tomatoes and pepper for 3 minutes, until they soften a little. 5. Add the spring onion and stir for 1 minute. 6. Pour the drained pasta and beans into the pan. Stir gently and let it heat for 1 minute. 7. Grate 200 g of smoked mozzarella on top and sprinkle with 1/2 teaspoon of freshly ground red pepper. Cover the pan, turn off the heat and leave it covered for 3 minutes, until the cheese softens.

Notes

Frozen green beans don't need to be thawed first, put them straight into the water. If the tomatoes are very soft and give off a lot of juice, drain them before adding them to the pan. Smoked cheese is quite salty, so don't add more salt after draining the pasta. It goes well with a simple green salad, and among drinks a dry white wine works. Tortelloni contain gluten, eggs and milk. Leftovers keep in the fridge for up to 3 days, and when reheating, put them in a pan with a spoonful of water.

Frequently asked questions

Can I use dried tortelloni instead of fresh ones?

Yes, but cook them for 10-12 minutes, until soft, and add the beans only in the last 4 minutes.

What if the green beans are too firm after cooking?

Leave them in the water for another 1-2 minutes, no longer, or they will lose their green colour.

What can I use instead of the smoked cheese?

Swap in 200 g of young sheep's cheese, finely grated. It works well, but it doesn't have the smoky taste.
