Over - Fish brine (II) by Eusebia I. - Recipia
To prepare a delicious grilled fish recipe, we will start by preparing the fish. Choose a fresh fish, preferably sea bream or perch fillets, which we will place on a generous bed of coarse salt, on a well-heated grill. The salt will not only flavor the fish but will also help retain its juice and natural taste. Let it cook on the grill for about 10-15 minutes, depending on the thickness of the fillet. When ready, carefully remove the fish from the grill and clean off the excess salt, being careful not to let salt crystals penetrate the flesh.

Once the fish is prepared, clean the grill of salt residues and prepare the vegetables. Slice the tomatoes thinly and dice the bell pepper. Place the vegetables on the grill for a few minutes until they are lightly browned and the skins of the tomatoes begin to peel. These will add a smoky note to the final dish. Once the vegetables are cooked, remove the skins from the tomatoes and chop them finely, along with the bell pepper.

Next, grate a carrot, which will bring sweetness and texture to the dish. Combine and finely chop the garlic, carrot, and diced bell pepper, then place them in a pan with a tablespoon of oil. Sauté over medium heat, stirring frequently, until the carrot becomes slightly soft and the flavors meld together.

Add a little water to the pan, followed by the chopped vegetables. Let everything simmer, stirring occasionally, to ensure even cooking. When the vegetables are almost done, add the tomatoes and bell pepper from the grill, as well as pepper to taste. Be careful not to add salt, as the fish will bring enough salt to the dish.

After everything has simmered and the flavors have intensified, remove the pan from the heat and add the fish. Gently stir so that the juices coat the fish, bringing a wonderful flavor. Depending on personal preferences, check the taste and, if necessary, add a little salt to adjust the flavor. Serve the dish warm, garnished with fresh herbs, for an unforgettable culinary experience. This dish will surely impress any guest.
