Wrapped Chops
To prepare a delight that will impress anyone, we start by cleaning and preparing the potatoes. Place the unpeeled potatoes in a pot of salted water and let them boil until soft, about 20-25 minutes. Once ready, drain them, let them cool slightly, then peel and grate them on a large grater. This method will add a pleasant texture to the mixture.
In a large bowl, add the cottage cheese, beaten eggs, crushed garlic, and 100 g of grated cheese. Season the mixture with salt, pepper, nutmeg, and plenty of finely chopped fresh parsley to taste. Make sure the ingredients are well combined so that the flavors blend perfectly. After mixing everything, let the composition sit for a few minutes to infuse the flavors.
Meanwhile, prepare the meat. Use a meat mallet to pound the slices of meat until they become thin and tender. This step is essential to achieve a pleasant texture when cooking. After pounding the meat, season it with salt and pepper to taste. Place the slices of meat in a greased ovenproof dish with a little butter, making sure they do not overlap.
On each slice of meat, add 1-2 tablespoons of the grated potato and cheese mixture. This will add a rich flavor and delicious texture to the dish. Sprinkle grated Parmesan on top and, if desired, a little cumin or paprika for extra flavor. Preheat the oven to 190 degrees Celsius and place the dish in for about 25-30 minutes. Watch carefully, as the pork chops cook quickly; when the potato and cheese crust turns golden, it's time to take them out.
10 minutes before they are done, sprinkle the remaining grated cheese on top and leave in the oven until melted and golden. When ready, remove the chops from the oven and serve them hot. Top each slice with a tablespoon of sour cream and a little grated cheese for a special look and taste.
