Varza a la Cluj in the multicooker

Meat - Varza a la Cluj in the multicooker by Ica A. - Recipia

Varza a la Cluj, a Romanian cabbage, rice and meat bake, layers cabbage, rice and meat, then cooks them for 60 minutes. In this multicooker version of cabbage with meat, the layers soften, while the rice binds the meat and cabbage together; paprika and tomato paste give the dish a reddish color, with a little liquid at the bottom of the pot. I chop the cabbage in a food processor and stop while there are still small pieces. Prep: 20 minutes. Cook: 103 minutes. Total time: 123 minutes. Servings: 3. About 680 kcal and 36 g protein per serving.

Ingredients

  • 1 medium cabbage (1000 g)
  • 1 teaspoon salt
  • 3 tablespoons oil
  • 1 teaspoon sweet paprika
  • 3 tablespoons tomato paste
  • 750 ml water
  • 75 g rice
  • 1 medium onion (150 g)
  • 500 g ground beef and pork mixture
  • 1/2 teaspoon ground pepper
  • 100 ml water

Preparation

1. Finely chop the cabbage and rub it with 1/2 teaspoon of salt. 2. Pour 1 tablespoon of oil into the multicooker pot. Choose the Fry function and cook the cabbage for 20 minutes, until the water it releases has cooked off. Add the paprika and 1 tablespoon of tomato paste, then turn off the appliance and transfer the cabbage to a bowl. 3. Rinse the rice. Put it in the pot with 750 ml of water, choose the Boil function and cook for 10 minutes, until al dente. Turn off the appliance, drain the rice and set it aside. 4. Finely chop the onion. Put 2 tablespoons of oil and the onion in the pot, choose the Fry function and cook for 5 minutes, until it begins to turn golden. Add the meat, 1/2 teaspoon of salt and the pepper, then cook for 5 minutes on Fry, until the juices have cooked off. 5. Add the rice and the remaining 2 tablespoons of tomato paste. Cook for another 3 minutes on Fry, stirring, then transfer the mixture to a bowl. 6. Put half the cabbage in the pot, spread the meat mixture on top and cover with the remaining cabbage. Choose the Bake function for 60 minutes and gradually add 100 ml of water as it cooks.

Notes

It is most often served with polenta and sour cream. I don't rush the cabbage's water cooking off, especially when the head is large and releases a lot of water; it may need a few extra minutes on Fry. If you take it out while liquid is still pooling, the bottom layer may stay soft and be hard to cut. Ground chicken can replace the beef and pork mixture, using the same amount of 500 g; with chicken, check that there is no liquid left in the mixture before layering. Cooled portions keep in the fridge for up to 3 days.

Frequently asked questions

Can I use brown rice?

Yes, cook it separately for 25-30 minutes, then drain it while the grain still offers a little resistance; it will continue to soften in the layers.

Can I use sauerkraut?

Yes, use 1 kg of well-drained sauerkraut and rinse it twice. Don't add the salt specified for the cabbage.

Can I use only beef?

Yes, 500 g of ground beef works; choose one with about 15% fat so it doesn't dry out.
