Oven-baked caramelized pork belly

Oven-baked caramelized pork belly stays tender thanks to an overnight marinade and a low oven, and it’s good for Christmas dinner too. Soy sauce, cinnamon orange liqueur and five-spice blend coat it in a sticky glaze, while the basil couscous stays simple alongside the meat. I like to serve it with warm couscous, not cold. Prep: 20 minutes. Cook: 75-80 minutes. Rest: 12 hours and 5 minutes. Total time: 13 hours and 40-45 minutes. Serves: 4. Approximately 1,250 kcal and 31 g protein per serving.
Ingredients
For the marinade
- 4 bone-in pork belly pieces (250 g each)
- 150 ml soy sauce
- 100 ml cinnamon orange liqueur
- 1 teaspoon sweet paprika
- 1/2 teaspoon curry powder
- 1 teaspoon five-spice blend
For finishing
- 30 ml cinnamon orange liqueur
- 4 garlic cloves
- 150 g plain yogurt
- 1 tablespoon olive oil
- 1/2 teaspoon salt
For the couscous
- 200 g couscous
- 250 ml water
- 1 teaspoon salt
- 1 tablespoon olive oil
- 5 g fresh basil
Preparation
1. Pat the pork belly pieces dry with paper towels. Mix the soy sauce with 100 ml liqueur, the paprika, curry and five-spice blend, then add the meat to the marinade and leave it covered in the fridge for 12 hours. 2. Heat the oven to 150°C. Put the meat and marinade in a baking dish and roast for about 60 minutes, until the meat is tender and cooked through. 3. Chop or crush the garlic and mix it with the olive oil, yogurt and 1/2 teaspoon salt. Pour the remaining 30 ml liqueur and the yogurt mixture over the meat, then put the dish in the oven at 220°C for 10-15 minutes, until the pieces are caramelized. 4. Boil 250 ml water for about 5 minutes and add 1 teaspoon salt. Pour the water over the couscous, cover it and leave for 5 minutes. Fluff it with a fork and mix in the olive oil and basil.
Notes
Thicker pieces may need a few extra minutes for the first bake, so choose pieces that are similar in thickness. The liqueur goes straight into the marinade and the baking dish; for an alcohol-free version, replace the 130 ml with 130 ml orange juice and a pinch of cinnamon. Soy sauce may contain gluten, and yogurt contains dairy. I time the marinade for the night before and work the oven into my dinner schedule. Leftovers keep in the fridge for up to 3 days; I serve them with the basil couscous.
Frequently asked questions
Can I use boneless pork belly?
Yes, choose pieces of similar thickness and start checking them after 45 minutes at 150°C, as they may cook through faster than bone-in pieces.
What can I use instead of five-spice blend?
For each teaspoon, use 1/2 teaspoon cinnamon and a pinch of ground cloves. The flavor will be less complex.
How do I check if the pork belly is done?
Measure the temperature at the thickest part, without touching the bone. Pork is done at 63°C, then let it rest for 3 minutes.
