Chicken breast and pea stew

Chicken breast and pea stew brings together tender cubes of chicken and peas in a sauce thickened with flour and the liquid saved from the jar. The onion and dill give it the taste of a homemade stew, and the sauce can be left thin or thickened more. I like it with crunchy pickles. Preparation: 15 minutes. Cooking: 18 minutes. Total time: 33 minutes. Servings: 2. Approximately 450 kcal and 40 g protein per serving.
Ingredients
- 250 g skinless boneless chicken breast
- 1 medium onion (150 g)
- 1 tablespoon oil
- 800 g jarred peas
- 200 ml liquid from the jar of peas
- 1 tablespoon flour
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 15 g fresh dill
Preparation
1. Cut the chicken breast into cubes about 2 cm across. Peel and chop the onion; drain the peas, saving 200 ml of the liquid from the jar. Finely chop the dill. 2. Heat 1 tablespoon of oil in a saucepan over medium heat. Add the onion and cook for 5 minutes, until soft and translucent. 3. Add the chicken cubes to the onion and cook for 8 minutes, stirring, until cooked through and they reach 74°C. 4. Mix 1 tablespoon of flour with the 200 ml of reserved liquid. Add the peas to the saucepan, then slowly pour in the flour mixture, stirring. Sprinkle with 1 teaspoon of salt and 1/2 teaspoon of black pepper; simmer for 5 minutes, until the sauce thickens. 5. Turn off the heat and stir in the chopped dill.
Notes
For a gluten-free version, replace the flour with 1½ teaspoons of starch, first mixed with 2 tablespoons of cold water; add it when the sauce is gently simmering. The peas from the jar may already be very soft, so stir them carefully after adding them to the saucepan. The onion can burn easily, but a low heat softens it without browning the edges. In texture, it is like a simple vegetable stew, only this one also has cubes of chicken. Serve it with green salad or pickles. It keeps in the refrigerator, in a sealed container, for up to 3 days.
Frequently asked questions
Can I use frozen peas?
Yes. Add 500 g of frozen peas and 180 ml of water to the saucepan, then simmer everything for 7 minutes.
Can I use chicken thighs too?
Yes, use boneless thighs cut into cubes about 2.5 cm across, and cook them for 10 minutes before adding the peas.
What should I do if the sauce is too thin?
Let it simmer uncovered for another 2 minutes, stirring from time to time.
