Beef round in tomato sauce

Beef round in tomato sauce simmers until tender, then the sauce thickens with vegetables and tomatoes. The carrots and pepper soften in the thick sauce, while fresh basil gives it a bright aroma. I cut the meat into large pieces after boiling so I can turn them easily in the pot. Prep: 20 minutes. Cook: 113 minutes. Total time: 133 minutes. Servings: 5. About 450 kcal and 45 g protein per serving.
Ingredients
- 1 kg beef round
- 2500 ml water
- 500 ml hot water
- 3-4 tablespoons oil
- 4 medium carrots (400 g)
- 1 large red pointed pepper (180 g)
- 3 garlic cloves
- 200 ml beef stock
- 100 ml dark beer (optional)
- 150 ml tomato juice or passata
- 1 teaspoon salt
- 5 g fresh basil
Preparation
1. Trim the tough membranes from the meat and pat it dry with paper towels. Put it in a pot with 2500 ml cold water, bring the water to a boil, then simmer for 90 minutes, until the meat is tender. 2. Drain the meat and pour 500 ml hot water over it. Let it drain, then cut it into large pieces. 3. Chop the carrots and pepper, then finely chop the garlic. Heat 3-4 tablespoons oil in a small saucepan and sauté the meat, carrots and pepper for 7 minutes. Add the garlic and cook for another minute, until the vegetables soften. 4. Pour in 200 ml beef stock, 100 ml dark beer and 150 ml tomato juice or passata. Add 1 teaspoon salt, bring the sauce to a boil, then simmer uncovered for 15 minutes, until thickened. Turn off the heat and sprinkle with the chopped basil.
Notes
You can replace the dark beer with 100 ml beef stock. Beer may contain gluten. A piece of meat with an even thickness cooks more tender; if you cut it in two, check the texture earlier than you would for a whole piece. If the tomato juice is very tart, replace 50 ml of it with beef stock. Keep the dish in the fridge for no more than 3 days. I didn't get around to making polenta, but serve it alongside the sauce.
Frequently asked questions
Can I use beef shank instead of beef round?
Yes, beef shank works, but simmer it for about 2 hours, until the meat comes easily off the bone.
What should I do if the beef round is still tough after simmering?
Leave it to simmer for another 20 minutes, then check the tenderness again.
Can I replace the tomato juice with fresh tomatoes?
Yes, use 200 g peeled and finely chopped tomatoes.
