Baked chicken livers

Baked chicken livers are usually served hot as a main lunch dish, with the onion and tomato paste sauce that has reduced in the baking dish. The onion and garlic soften in the tomato paste with thyme, and the sauce stays thick around the livers; I choose pieces that are roughly the same size so they cook evenly and the small ones don't dry out while the big ones are still cooking. Prep: 15 minutes. Cook: 30 minutes. Total: 45 minutes. Serves: 2. Approximately 520 kcal and 48 g of protein per serving.
Ingredients
- 500 g frozen chicken livers
- 2 medium onions (300 g)
- 1 head of garlic (40 g)
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 2 tablespoons oil
- 3 tablespoons tomato paste
- 1 teaspoon dried thyme
Preparation
1. Thaw the livers completely in the refrigerator, then pat them with paper towels until no moisture remains on the surface. 2. Dice the 2 onions and the head of garlic. 3. Put the livers, onion and garlic in a baking dish. Add 1 teaspoon of salt, 1/2 teaspoon of pepper, 2 tablespoons of oil, 3 tablespoons of tomato paste and 1 teaspoon of thyme. Mix until the sauce coats the livers. 4. Bake at 180°C for 30 minutes, until the livers are cooked through in the center and no raw middle remains.
Notes
Whole, glossy livers with no greenish spots are best; the spots can make the sauce bitter, and if the tomato paste is salty, use only 1/2 teaspoon of salt. Cut very large pieces in half, and check the small ones after 25 minutes, since they cook faster. With polenta, it makes you think of an onion and liver stew, and you can spoon the sauce straight from the baking dish. You can swap the thyme for 1 teaspoon of marjoram if that's what you have on hand. Store leftovers in a sealed container in the refrigerator for up to 3 days.
Frequently asked questions
Can I use turkey livers?
Yes, use 500 g and increase the baking time to 35 minutes at 180°C, until there is no raw middle.
Why did the livers turn out tough?
They were usually overcooked; take them out when the center reaches 74°C.
What should I do if the sauce is too watery?
Take the livers out and leave the sauce on its own for 5 minutes at 200°C, then put them back and stir.
