Smoked potatoes with white sauce
We start by preparing the necessary ingredients for this delicious recipe. We take a small, fresh onion, which we will finely chop. This step is essential, as the onion will add a special flavor to our dish. Next, we turn to a carrot, which we peel and cut into small cubes, so that it cooks evenly and quickly.
In a frying pan or pot, we add a little oil, enough to cover the bottom of the vessel, and put in the chopped onion and carrot. We sauté them over low heat, stirring occasionally, until the onion becomes translucent and the carrot slightly changes color. This process will provide a wonderful sweet and savory taste, which will form the base of our dish.
After the vegetables have sautéed, we add a few tablespoons of water, and for extra flavor, we introduce two cubes of vegetable broth or vegetable concentrate. We mix well to allow the flavors to combine, and then we let the mixture simmer over low heat, covered, for about 5 minutes. This step will help extract all the flavors from our vegetables.
In the meantime, we take care of the potatoes we prepared earlier. We peel them and cut them into medium-sized cubes. It is important that all pieces are of similar size so that they cook evenly. After we finish with the potatoes, we add them to the pot over the vegetable mixture.
We add enough water to cover all the ingredients, then let it boil. When the water starts to boil, we reduce the heat to medium and cover the pot with a lid. We let it boil for about 20-25 minutes or until the potatoes become tender.
When the potatoes are well cooked, we can check the taste and, if desired, adjust the seasonings. A great idea is to add a pinch of freshly ground pepper and, possibly, some herbs like parsley or dill for a fresher taste.
Once we have achieved the desired consistency, we can serve our dish hot, alongside a fresh salad or, why not, with a slice of crusty bread. This simple yet flavorful recipe will surely bring a smile to the faces of our loved ones!
