Ingredients:
- 300 g pasta (preferably spaghetti or linguine)
- 200 g peeled shrimp (preferably fresh, but frozen are fine too)
- 2 medium zucchinis
- 2 ripe tomatoes
- 1 small onion
- 2 garlic cloves
- 4 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Dried oregano or fresh basil for garnish
- Optional: lemon juice for an extra touch of freshness

Preparation:

1. Cooking the pasta: Start by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Be sure to reserve a few tablespoons of the pasta cooking water to add later to the sauce.

2. Preparing the vegetables: While the pasta is boiling, finely chop the onion and garlic. The zucchinis can be sliced into rounds or halved, depending on your preference. Dice the tomatoes. These vegetables not only add a fresh taste but also a pleasant texture to the dish.

3. Sautéing the onion and garlic: In a large skillet, add the olive oil and sauté the onion over medium heat until translucent. Then, add the garlic and sauté for another 1-2 minutes, being careful not to let it burn, as it can become bitter.

4. Adding the zucchini and tomatoes: Once the onion and garlic are ready, add the sliced zucchini and tomatoes. Sauté the vegetables for 5-7 minutes, stirring occasionally, until the zucchini becomes slightly soft.

5. Including the shrimp: Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque. This is the moment when you can also add a bit of lemon juice to enhance the flavors.

6. Finishing the dish: When the pasta is ready, drain it and add it to the skillet, gently tossing to combine with the shrimp and vegetable sauce. If the sauce seems too dry, add a little of the pasta water to achieve a creamier consistency. Adjust salt and pepper to taste.

7. Serving: Serve the pasta hot, garnished with dried oregano or fresh basil. You can also drizzle a bit of olive oil on top for extra flavor.

Personal suggestion: This dish can easily be transformed into a vegetarian meal by replacing the shrimp with tofu pieces or more vegetables, such as bell peppers or mushrooms.

Experiment with different types of pasta or add grated parmesan on top for an extra burst of flavor! This shrimp pasta recipe with zucchini and tomatoes is not only quick but also easy to make, perfect for family dinners or gatherings with friends. Enjoy!
