To prepare a delicious baked lentil dish, we start with an essential step: cleaning and washing the lentils. They should be soaked in cold water for about 2 hours. This process will help the lentils become softer and easier to cook. After this time has passed, drain the lentils and rinse them again in 1-2 fresh waters to remove impurities. Then, put the lentils to boil in a pot with cold water, adding enough water to cover them by a finger's width. At this stage, add a bay leaf and a few sprigs of thyme to give a pleasant aroma. Boil the lentils over medium heat until they are al dente. It is important not to salt the lentils before they are cooked, but to add salt only at the end to avoid the beans becoming hard. Once the lentils are cooked, drain them and let them cool.

In a skillet, heat a mixture of oil and butter, then add finely chopped onion and crushed garlic. Sauté until they become translucent and aromatic. Next, add grated carrots and diced bell pepper, continuing to sauté the mixture until the vegetables soften and release their flavors. Once the vegetables have cooled, combine them with the lentils, also adding finely chopped herbs such as parsley or dill, and half of the grated cheese. Adjust the mixture with salt and pepper to taste.

Prepare a heat-resistant dish greased with butter, then add the lentil and vegetable mixture. In a separate bowl, lightly beat the 4 eggs and season them with salt and pepper. Pour the beaten eggs over the mixture in the dish, ensuring they are evenly distributed. Finally, sprinkle the remaining grated cheese on top to achieve a golden and delicious crust.

Preheat the oven to 190 degrees Celsius and place the dish inside. Bake for 20-25 minutes or until the cheese on top is melted and has a nicely browned crust. When ready, remove the baked lentils from the oven and let them cool slightly before serving. This dish can be enjoyed warm, either as a main course or as a side dish alongside meat or other preparations. The rich flavors and creamy texture of the baked lentils will surely delight any meal!
