Baked meatballs

Baked meatballs combine bread soaked in milk with a mixture of pork and beef, then turn golden at the edges and stay soft inside. Dill and parsley meet in the mixture, with finely chopped onion among them. I shape them about the size of a large walnut so they’re all the same size. Prep: 20 minutes. Cook: 60 minutes. Total time: 80 minutes. Servings: 3. About 880 kcal and 43 g of protein per serving.
Ingredients
- 250 g ground pork
- 250 g ground beef
- 2 slices of bread (60 g)
- 100 ml milk
- 2 medium onions (300 g)
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 2 eggs
- 15 g dill
- 15 g parsley
- 5 ml oil
Preparation
1. Heat the oven to 180 °C. Soak the bread in 100 ml of milk, then gently squeeze it out. Finely chop the onions, dill and parsley. 2. In a bowl, mix the pork and beef with the onion, bread, 1 teaspoon of salt, 1/2 teaspoon of pepper, the eggs, dill and parsley. Mix everything together well. 3. Shape into round meatballs, about 4 cm across. Line a baking tray with parchment paper and grease it with 5 ml of oil. 4. Put the meatballs on the tray and bake for 60 minutes at 180 °C, until browned and cooked through in the middle. Serve hot or cold.
Notes
Keep the meatballs in a covered container in the fridge for up to 3 days. I serve them with mashed potatoes or a tangy salad. If you make them larger than 4 cm, they may need a few extra minutes in the oven, while smaller ones cook faster. The pork can have a little fat, and the beef shouldn’t be too lean, so the mixture doesn’t turn out dry. Squeeze the bread well, but not until it gets hard; if it stays too soggy, the mixture softens and the meatballs can spread out. For a gluten-free version, use 2 slices of gluten-free bread and the same 100 ml of milk; the dish contains dairy and eggs.
Frequently asked questions
Can I use turkey instead of the mixture?
Yes, you can use 500 g of ground turkey; the center of the meatballs needs to reach 74 °C.
Can I add garlic to the mixture?
Yes, finely grate 1 clove of garlic, about 5 g, and mix it in with the onion.
How do I check whether they’re cooked through in the middle?
With the pork and beef combination, the center needs to reach 71 °C.
