Strawberry cup dessert with milk cream

Strawberry cup dessert is served cold, after a meal, and has a milk cream thickened with eggs and starch, strawberries and whipped cream. The cream comes out thick and smooth, and the whipped cream on top is firm, made with powdered sugar and a little cold milk. I choose the thickest cream I can find, because otherwise the whipped cream won't stay on the cup. Preparation: 30 minutes. Cooking: 10 minutes. Resting: 30 minutes. Total time: 70 minutes. Servings: 5. About 710 kcal and 12 g protein per serving.
Ingredients
For the cream
- 3 large eggs
- 150 g sugar
- 20 g food starch
- 650 ml milk
- 80 g Pilos butter with over 80% fat
For the whipped cream
- 350 g heavy cream
- 60 g powdered sugar
- 60 ml cold milk
For decorating
- 400 g strawberries
- 50 g chocolate chips
Preparation
1. In a stainless steel bowl, add the 3 eggs, 150 g sugar and 20 g starch and mix well with a whisk. 2. Dilute with 650 ml milk, then set the bowl over a bain-marie. 3. Stir constantly until the cream thickens, about 10 minutes. 4. Take the bowl off the bain-marie and put it in the sink, over cold water. Add 80 g butter and mix until the cream is cool enough to spoon into the cups. 5. Prepare 5 cups. Put 3 whole strawberries in each cup, add a ladle of cream, then place 100 g halved strawberries around the edge and sprinkle with 25 g chocolate chips. 6. Add the rest of the cream to the cups, almost to the rim. 7. For the whipped cream, put 350 g heavy cream, 60 g powdered sugar and 60 ml cold milk in a bowl. Mix until you get a firm cream, without beating it too much, or it turns to butter. 8. Decorate the cups with the whipped cream, with 100 g sliced strawberries and 25 g chocolate chips. 9. Put the cups in the fridge for 30 minutes, then serve.
Notes
The starch can be replaced with 40 g flour, but then mix it well with the eggs so no lumps form. The cream has eggs and milk, so it is not suitable for people with egg or dairy allergies. The dessert is served cold, straight from the cup. The strawberries must be dried well after washing, otherwise the water ruins the whipped cream. If the whipped cream is too soft, leave it 10 minutes in the fridge before putting it on the cups. The cups can stay in the fridge for up to three days. I take them out a few minutes before serving, so the whipped cream isn't too cold.
Frequently asked questions
What can I replace the strawberries with?
Raspberries or blackberries can take their place, in the same amount, 400 g. Blueberries work too, also 400 g.
What do I do if the cream has lumps?
Pass it through a fine sieve before putting it in the cups, even if it is still quite warm.
Can I use 20% cream for the whipped cream?
No, at 20% fat the whipped cream won't hold its shape, better stick with the 350 g of thick sweet cream.
How do I choose strawberries for the dessert?
Pick them red right up to the stem and firm, without soft spots, because soft ones leave water in the cup.
