Russian-style cottage cheese pie

Smoothly blended cottage cheese makes the center of this Russian-style cottage cheese pie soft; it browns in 30-40 minutes. Semolina and sour cream give it body, and the raisins are optional, for a result close to a baked cheese pudding. I leave out the raisins and cut it once it has cooled completely. Prep: 15 minutes. Cook: 30-40 minutes. Rest: 30 minutes. Total time: 75-85 minutes. Serves: 6. Approximately 290 kcal and 18 g protein per serving.
Ingredients
- 3 tablespoons semolina
- 5 tablespoons sour cream
- 3 eggs
- 4 tablespoons sugar
- 3 packets vanilla sugar
- 1/8 teaspoon salt
- 500 g cottage cheese
- 50 g raisins (optional)
- 10 g butter
To serve
- 100 g sour cream
- 60 g jam or honey (optional)
Preparation
1. Mix the semolina with 5 tablespoons of sour cream and set the bowl aside for 30 minutes. 2. Beat the eggs with the salt, sugar and vanilla sugar until the sugar dissolves and the mixture doubles in volume. 3. Blend the cottage cheese with an immersion blender. Add the eggs and the semolina mixed with sour cream, then mix until smooth; if you like, fold in 50 g of raisins. 4. Grease a baking dish with butter and pour in the mixture. Bake in a preheated oven at 180°C for 30-40 minutes, until nicely browned on top. 5. Let it cool, then lift it out of the dish and serve with sour cream and jam or honey.
Notes
The cottage cheese should be well drained; if there is whey on the surface, leave it in a sieve for 10 minutes before blending. Very coarse cottage cheese is easier to blend with an immersion blender than with a fork. A 30x20 cm dish keeps the pie at the right thickness for the stated baking time. Store covered in the fridge for up to 3 days. Contains dairy, eggs and gluten from the semolina; serve with sour cream and sour cherry jam.
Frequently asked questions
Can I use ricotta instead of cottage cheese?
Yes, use 500 g of ricotta. If it has a lot of whey, leave it to drain for 15 minutes before blending.
How can I tell if it is cooked through in the middle?
At around 35 minutes, the center should be set, with no wet shine; if it still wobbles like liquid, leave it in a little longer at 180°C.
Can I bake it in a round pan?
Yes, use a pan about 26 cm across and start checking it after 30 minutes.
What can I do if the cheese is lumpy after blending?
Press it through a fine-mesh sieve for 2-3 minutes, then mix it with the eggs and the semolina mixed with sour cream.
