Dessert is often the star of the meal, and a yogurt and peach cream cake is the perfect choice to bring a touch of freshness and sweetness to any occasion. This recipe is not only simple but also versatile, allowing you to use the fruits you have on hand. I invite you to discover the necessary steps to create a delicious and refreshing cake, ideal for warm days or to impress guests at parties.

Preparation time: 30 minutes
Chilling time: 4-5 hours
Total time: 5 hours and 30 minutes
Number of servings: 10-12

Ingredients:
- 1 pack of ladyfingers (about 40 pieces)
- 1 can of peach compote (750 g)
- 400 ml yogurt
- 15 g gelatin (about 1 packet)
- 1 vanilla pudding (preferably Dr. Oetker)
- 500 ml milk
- 4 tablespoons sugar (for pudding)
- 150 g sugar (for yogurt)
- 200 ml whipped cream (for decoration)
- Chocolate hearts (optional, for decoration)

Preparing the cake:
1. Preparing the gelatin: Start by softening the gelatin. Place it in a cup with cold water, covering it with about 2 fingers of water. Let it sit for a few minutes until it becomes soft.

2. Preparing the vanilla pudding: In a saucepan, bring part of the milk (about 400 ml) to a boil. In a separate bowl, mix the remaining milk (no more than 100 ml) with the vanilla pudding powder and the 4 tablespoons of sugar. Mix well, then add it to the hot milk in the saucepan. Stir continuously over low heat until the cream begins to thicken. Once thickened, remove the saucepan from the heat and add the softened gelatin. Mix well to ensure the gelatin dissolves completely.

3. Preparing the yogurt: In another bowl, mix the yogurt with the 150 g of sugar. Set aside until the vanilla pudding cools slightly.

4. Combining the creams: When the vanilla pudding has cooled, combine the two creams (vanilla cream and yogurt) with a spatula or spoon, being careful not to lose the air in the mixture.

5. Preparing the ladyfingers: Drain the juice from the peach compote. Dip each ladyfinger on both sides in the compote juice, then place them in a springform pan, trimming the ends if necessary to fit perfectly in the pan.

6. Assembling the cake: Place a layer of ladyfingers at the bottom of the pan, then pour half of the yogurt and vanilla cream over it. Place peach halves on top of the cream and pour the remaining cream over them. Cover with another layer of ladyfingers if desired, or leave only the layer of peaches visible.

7. Chilling the cake: Cover the cake with plastic wrap and refrigerate for 4-5 hours, or until it sets well.

Decorating the cake:
1. Preparing the whipped cream: Once the cake has set, whip the cream until it becomes firm. Use a piping bag to decorate the cake with whipped cream, creating flower or rose shapes.

2. Chocolate hearts: If you want to add a special touch, melt 100 g of white chocolate and mix it with a few drops of red and yellow food coloring to achieve an orange shade. Use a mold to cut out hearts from the chocolate, which you can place on the cake as decoration.

Serving and variations:
The yogurt and peach cream cake can be served plain or accompanied by a fruit sauce or ice cream scoops. You can also experiment with various fruits, such as cherries, sour cherries, mango, or strawberries, depending on the season or personal preferences. It offers a pleasant contrast between the sweetness of the cream and the acidity of the fruits.

Nutritional benefits:
This cake is not only a delight but also a lighter option for dessert compared to other calorie-rich cakes. Yogurt provides a source of protein and probiotics, beneficial for the digestive system. Peaches, besides their sweet taste, are rich in vitamins A and C, essential antioxidants for a balanced diet.

Frequently asked questions:
1. Can I use other types of milk? Yes, you can substitute regular milk with almond milk or coconut milk for a lactose-free option.
2. How can I make the cake less sweet? Reduce the amount of sugar in the yogurt or use a natural sweetener.
3. How long can the cake be kept? The cake can be stored in the refrigerator for up to 3 days, but it is best enjoyed fresh in the first few days.

Personal note:
This yogurt and peach cream cake recipe has quickly become one of my favorites due to its simplicity and the versatility of the ingredients. I have tried personalizing it with different types of fruits, but peaches remain the family favorite. Whether it's for a celebration or a simple family meal, this cake will always bring smiles and good cheer to the table. I hope you enjoy this recipe as much as we do! Bon appétit!
