No-bake fruit cheesecake

No-bake fruit cheesecake has a biscuit and oat base, topped with cottage cheese, cream and fruit set with gelatin sheets. The filling chills until firm, with pieces of fruit visible in each slice and a few whole ones on top. I like to cut it into thin slices and serve it cold. Prep: 25 minutes. Cook: 2 minutes. Rest: 4 hours and 10 minutes. Total time: 4 hours and 37 minutes. Servings: 8. Approximately 425 kcal and 10 g protein per serving.
Ingredients
- 200 g biscuits
- 50 g rolled oats
- 100 g butter at room temperature
- 500 ml cold water
- 10 g gelatin sheets
- 200 ml whipping cream
- 400 g cottage cheese
- 50 g sugar
- 1 teaspoon vanilla extract
- 3 tablespoons yogurt
- 300 g mixed grapes raspberries and blackberries
Preparation
1. Crush the biscuits, rolled oats and softened butter in a food processor until the mixture comes together. Press it into the bottom of a 22 cm cake tin and refrigerate while you prepare the filling. 2. Soak the gelatin sheets in 500 ml cold water for 10 minutes, then drain and gently squeeze them. 3. Heat 50 ml whipping cream in a small saucepan for 2 minutes, until it starts to steam. Take it off the heat and dissolve the gelatin in it. 4. Mix the cottage cheese with the sugar and vanilla extract until smooth. Stir in the cream and gelatin, then add the remaining 150 ml cream and the yogurt. 5. Halve 200 g of the grapes, raspberries and blackberries, and set aside 100 g whole fruit for decoration. Fold the cut fruit into the filling. 6. Pour the filling over the base, decorate with the whole fruit and refrigerate the cheesecake for 4 hours, until the filling sets.
Notes
I serve it cold with plain black tea. Covered, it keeps in the fridge for up to 3 days. If the cottage cheese releases whey, drain it before mixing so it doesn't thin the filling. Seedless grapes are easier to cut and eat without interrupting the texture of a slice. For a larger amount, I prefer to make two separate cakes; for a gluten-free base, choose certified gluten-free biscuits and oats, bearing in mind that the filling contains dairy.
Frequently asked questions
Can I use powdered gelatin instead of sheets?
Yes. Replace the 10 g gelatin sheets with 10 g powdered gelatin, bloomed in 50 ml cold water, then heat gently until dissolved.
Why is the filling still soft?
The gelatin may not have dissolved completely. Leave the dessert in the fridge for another 2 hours before cutting it.
Can I use frozen fruit?
Yes, use 300 g and leave it to thaw in a sieve for 30 minutes, then cut it and fold it into the filling.
