Homemade chocolate wafer cake

Dessert - Homemade chocolate wafer cake by Gratiana O. - Recipia

Homemade chocolate wafer cake is made with three sheets, one white layer and one cocoa layer. Sugar syrup and butter bind the powdered milk into a filling that sets overnight, while the sheets stay easy to portion. I choose whole sheets, with no broken corners, so the layers stay even. Prep: 15 minutes. Cook: 4 minutes. Rest: 8 hours. Total time: 8 hours and 19 minutes. Servings: 16. Approximately 270 kcal and 6 g protein per serving.

Ingredients

  • 3 wafer sheets
  • 250 g sugar
  • 125 ml water
  • 100 g butter
  • 350 g powdered milk
  • 30 g cocoa

Preparation

1. Put the water and sugar in a small saucepan and heat until it comes to a boil. Once boiling, leave the syrup on the heat for another 3-4 minutes. 2. Remove the saucepan from the heat, add the butter and stir until it melts and the syrup is smooth. 3. Add the powdered milk to the syrup and stir vigorously. Spread half the mixture over the first wafer sheet. 4. Place the second sheet over the white layer. Stir the cocoa into the remaining mixture and spread it quickly, before it sets. 5. Cover with the last sheet and leave the cake in a cool place overnight, about 8 hours.

Notes

I had it on the table at my nephew's christening, among six kinds of cakes. For a gluten-free version, choose certified sheets; the powdered milk and butter still mean the cake contains dairy. Keep it covered in the fridge for up to 3 days. Whole sheets, without cracks, keep the layers straight, and sifted cocoa mixes in without lumps. Cut into small squares and serve with black tea.

Frequently asked questions

What kind of powdered milk works best?

Choose plain, unsweetened powdered milk. Coffee creamer may contain sugar and other additives, and the filling won't turn out the same.

How do I cut the sheets without cracking them?

Leave the cake on the counter for 15 minutes before cutting and use a serrated knife with a light touch.

Can I use square sheets instead of rectangular ones?

Yes. Line up the edges; if the sheets are different sizes, some areas may have a thicker layer of filling.
