I dedicate this wonderful recipe to Ioana, who has eagerly awaited to enjoy a blueberry tart. This tart is not just a quick dessert, but also a culinary masterpiece, perfect for any occasion. Whether you serve it at a party or a family dinner, it’s impossible not to impress everyone with this delight. Let's get started!
Preparation time: 30 minutes
Baking time: 45 minutes
Total time: 1 hour 15 minutes
Number of servings: 8
Ingredients:
- 200 g fresh blueberries
- 70 g powdered sugar
- 1 tablespoon lemon juice
- 100 g biscuits (preferably digestive)
- 45 g butter (melted)
- 250 g mascarpone cheese
- 70 g honey
- Zest of one lemon
- 1 tablespoon vanilla sugar
- 2 large eggs
- 100 ml heavy cream
- 100 ml water
Step-by-step instructions:
1. Preparing the blueberry sauce: In a small pot, add 100 ml of water, blueberries, powdered sugar, and lemon juice. Place the pot on low heat and let the mixture simmer for 15 minutes. Stir occasionally to prevent sticking. When the syrup has reduced and the blueberries are soft, turn off the heat and let the sauce cool. This blueberry sauce will add an intense flavor and a note of freshness to your tart.
2. Preparing the biscuit base: Meanwhile, preheat the oven to 180 degrees Celsius. Crush the biscuits in a food processor or in a plastic bag using a rolling pin. Mix the crushed biscuits with the melted butter until you achieve a homogeneous mixture. Place the mixture in a tart pan (22-24 cm in diameter) and press gently to form an even base. Place the pan in the refrigerator for 10 minutes to set.
3. Preparing the filling: In a large bowl, combine the mascarpone cheese with honey, lemon zest, and vanilla sugar. Mix well until it becomes a smooth cream. Add the eggs, one at a time, mixing well after each addition. Finally, fold in the heavy cream, mixing gently to avoid incorporating too much air.
4. Assembling the tart: Remove the biscuit base from the refrigerator and pour the mascarpone cream over it, smoothing it with a spatula. Place the pan in the oven and bake for about 35 minutes, or until the filling is firm and slightly golden at the edges.
5. Adding the blueberry sauce: After 35 minutes, remove the tart from the oven and spread the cooled blueberry sauce on top. Return the pan to the oven for another 10 minutes. This step will further enhance the flavors.
6. Cooling the tart: Once the tart is ready, let it cool on a wire rack. It’s important to let it cool completely before slicing to avoid breaking.
Serving suggestions: Serve the blueberry tart with a scoop of whipped cream or vanilla ice cream for a perfect contrast of textures and flavors. You can also add a few fresh mint leaves for an elegant touch.
Variations: Instead of blueberries, you can use raspberries or strawberries, and for an extra hint of flavor, try adding a few drops of almond extract to the mascarpone cream.
This blueberry tart will not only satisfy your sweet cravings but will also bring a touch of joy to your tables. Enjoy every slice and relish the admiring comments from your guests!
