To create a delicious and easy-to-make dessert, we will start with a key ingredient: jam. Put your favorite jam in a bowl and mash it with a spoon or, if you prefer, gently heat it on the stove or in the microwave to obtain a thick paste that is also easy to spread. It is important to achieve a smooth consistency that can be applied easily to the cake base. Once you have the ideal jam, set it aside and prepare the baking tray.

Line a tray measuring 30 x 40 cm or larger with baking paper, making sure to cover all the edges well. Then, grease the paper with a little oil, which will help the baked base to release easily. Preheat the oven to a temperature of 180-200 degrees Celsius, so that the base bakes evenly.

Meanwhile, take a large bowl and add the eggs along with the sugar. Whisk them at medium speed until the mixture becomes a fluffy cream that will triple in volume. This is a crucial step, as the air incorporated into the eggs will help achieve a fluffy base. Sift the flour together with the baking powder and milk powder, adding them gradually to the egg mixture. Don’t forget to add a pinch of salt. Mix well, ensuring that no lumps remain, and the resulting mixture will have a consistency similar to that of sour cream.

When the oven is hot, take out the tray and pour the batter evenly into it, leveling it to achieve an even base. Place the tray in the oven and bake for 5-7 minutes, but be careful, as the batter bakes quickly. Check constantly, because the base must not become too dark.

Once the base is baked and the edges start to turn golden, remove the tray from the oven. At this point, with the hot base, quickly spread the prepared jam and carefully roll it up, peeling off the baking paper as you go. Working quickly is essential, as the thin base cools quickly and may crack. If you want to avoid burning your hands, use a kitchen towel or oven mitts.

Let the roll cool completely, then you can slice it with a sharp knife. To add extra flavor, decorate the slices with powdered sugar or melted chocolate, sprinkled with chopped nuts. This dessert is not only delicious but also impressive, perfect for serving on special occasions or simply to indulge in during an ordinary day.
