The first step is to prepare the sweet starter. In a small glass bowl, mix 10 grams of sugar with the fresh yeast until it becomes liquid. Add 100 grams of warm milk and 6 tablespoons of flour, then let the mixture rise for 15 to 30 minutes. Meanwhile, in a large bowl, mix the flour with the salt to obtain the dry ingredients.

Once the dough has risen, oil the work surface and roll it out, forming a log to fit the size of the cozonac mold. Place the dough in the mold, allowing it to rise again for 30 minutes. Preheat the oven to 180 degrees Celsius and place the cozonac inside, adding a dish of water to create steam.

Bake the cozonac for about 30 minutes, checking if it is baked using a thermometer or a toothpick. If it is ready, remove it from the mold and let it cool on a rack. For an extra flavor, prepare a syrup from sugar and water, which you will use to glaze the cozonac.
