Semolina Cake with Fruits
To create a delicious and fragrant cake, start by separating the eggs into two large bowls. Whip the egg whites with a pinch of salt until you achieve a firm foam, then, in another bowl, mix the egg yolks with sugar and vanilla essence until the mixture becomes light in color and creamy. It is essential to be patient in this process, as the proper aeration of the eggs will contribute to the fluffy texture of the cake.
Once you have a homogeneous cream from the yolks, incorporate ricotta or crumbled cottage cheese. Gently mix to avoid losing air from the mixture. Then, in another bowl, combine the semolina with the baking powder. Gradually add this semolina mixture to the egg cream, stirring constantly. It is important not to leave lumps, so use a spatula or a whisk to achieve a smooth composition.
Fresh fruits, cut into small cubes, will add a note of freshness and sweetness to your cake. You can choose seasonal fruits, such as strawberries, peaches, or blueberries, depending on your preferences. Carefully incorporate the fruits into the batter, keeping some aside to add on top of the cake before putting it in the oven.

After it has been baked, let the cake cool completely in the tray. Once it has cooled, gently sprinkle powdered vanilla sugar on top for an elegant finish.
