Pumpkin Pie
We start the culinary adventure by preparing a delicious pumpkin cream that will add a touch of flavor to our recipe. We take a large pot and add 2-3 tablespoons of oil, preferably olive or sunflower, to provide a pleasant taste. Once the oil is heated, we add freshly grated, silky pumpkin, which we sauté over medium heat, stirring constantly. It is important to let the pumpkin cook until the liquid evaporates completely, and the flavors concentrate, turning the dish into a flavorful base for our filling.
Once the pumpkin reaches the desired consistency, we add sugar, which will bring a touch of sweetness, then we sprinkle semolina in a rain, about 3 tablespoons, to thicken the cream. We add a teaspoon of cinnamon, which will add a warm and comforting aroma, and chopped nuts, which will provide a crunchy texture. We mix the ingredients well, then let the cream cool so we can work on the dough.
In another bowl, we mix the baking powder with the flour, ensuring it is evenly distributed. We add the other necessary ingredients for the dough, such as eggs, milk, and a pinch of salt, and we start kneading. The dough will be elastic and easy to handle. After kneading, we cover it with plastic wrap and let it rest in the refrigerator for 15 minutes to relax and firm up a bit.
After the dough has been in the fridge, we divide it into two equal parts. From each piece, we roll out a sheet the size of the baking tray, being careful to do it directly on the parchment paper. This trick will help us transfer the sheet easily to the tray. We place the first sheet in the tray, parchment paper included, and prick it here and there with a fork to prevent puffing.
We sprinkle a tablespoon of semolina over the entire surface, which will absorb any moisture and help maintain the texture. Then we evenly distribute the cooled pumpkin filling and sprinkle another tablespoon of semolina on top. With quick movements, we transfer the second sheet of dough over the filling and press it lightly to stick.
We prick it here and there to allow steam to escape during baking, and we place the tray in the preheated oven at 180 degrees Celsius. We bake until the edges turn golden and the delicious aroma fills the entire kitchen. Once ready, we let the dish cool completely before slicing.
