To prepare a delicious coconut dessert, we start by activating the yeast. In a small bowl, we mix one teaspoon of sugar with 100 ml of warm milk and one teaspoon of flour. We let this mixture sit for 10-15 minutes until the yeast becomes frothy and activated. In the meantime, we can prepare the filling.

For the filling, we start by beating the egg whites with the sugar and vanilla essence until we obtain a firm foam. Then, we add the coconut and gently mix with a spatula to keep the air in the egg whites. We divide the filling into three equal parts so that we have enough portions for each sheet of dough.

Now, we turn our attention to the dough. In a large bowl, we mix the melted margarine with the egg yolks and the activated yeast. We gradually add flour, continuously mixing until we obtain an elastic dough. It is important not to let the dough rise, so we divide it into three equal parts.

Each portion of dough will be rolled out on a floured work surface to a size of about 25/30 cm. It is essential to work patiently, ensuring that the sheet is even. We spread each sheet with a portion of the coconut filling, making sure to distribute it evenly. We roll the sheet tightly, forming a log that will be cut later.

The slices are cut with a sharp knife, which we will dip in cold water before each cut to avoid sticking the dough. The resulting slices, about the thickness of a finger, are placed on a baking tray lined with parchment paper, leaving a little space between them to allow for expansion during baking.

Once all the slices are prepared, we place the tray in the preheated oven at 180 degrees Celsius and bake for about 20 minutes until they become golden and appetizing. After removing them from the oven, we let them cool slightly before enjoying. This coconut dessert is perfect to be served with a cup of tea or coffee, bringing a touch of joy in every bite.
