To prepare a delicious roll filled with chestnut puree, we start by carefully separating the egg whites from the yolks. It is important to ensure that no impurities remain, as the egg whites need to be whipped to a frothy consistency to achieve a fluffy texture. In a bowl, we mix the yolks with a small amount of water, which will help create a more homogeneous mixture.

In another bowl, using a mixer, we start whipping the egg whites until they become frothy. We continue to gradually add the sugar, beating further until we obtain a firm and shiny meringue. This step is essential, as the meringue will provide the roll with an airy structure. Once the meringue is ready, we add the mixture of yolks and water, gently beating to incorporate the ingredients.

After we have well integrated all the ingredients, we add the sifted flour, gently mixing with a wooden spoon. It is important not to overmix, as the air in the mixture needs to remain trapped to achieve a fluffy roll. Once the mixture is homogeneous, we pour it into a large baking tray, which we have previously lined with parchment paper.

We bake the roll in a preheated oven at 190 degrees Celsius for about 20 minutes. When ready, we take the tray out of the oven and turn the cake over onto a damp kitchen towel that we have wrung out well. We carefully remove the parchment paper, taking care not to tear the cake. Then, we roll the cake together with the towel, allowing it to cool completely in this form.

In the meantime, we take care of the filling. By whipping the cream until it becomes firm, we gradually add the chestnut puree, mixing with a spatula to achieve a uniform composition. Finally, we add the chocolate chips, bringing an extra flavor and texture. For decoration, we whip another portion of cream together with a stabilizer, so that we obtain a stable cream, perfect for coating the roll.

Once the cake has cooled completely, we carefully unroll the roll, placing it on a platter. We fill it with the prepared cream, then roll it up again carefully. We coat the roll in whipped cream and decorate it with grated chocolate, fresh fruits, or other decorative elements, according to our inspiration at the moment. This roll with chestnut puree and whipped cream is perfect for a refined dessert that will surely impress our loved ones.
