To prepare a delicious cherry cake, we will start by preparing the batter. In a large bowl, beat the egg whites with a pinch of salt, sugar, and vanilla sugar until you achieve a firm and glossy foam. It is important to use a mixer on high speed to incorporate air into the mixture, which will make the batter light and fluffy. Continuing to mix, gradually add the egg yolks, ensuring that each is well incorporated before adding the next.

Once all the ingredients are homogenized, start incorporating the flour, starch, baking powder, and cocoa, mixing with a spatula from the bottom up to keep the air in the mixture. Finally, add the two tablespoons of oil, which will help maintain the moisture of the batter. Once the mixture is ready, grease a cake pan with butter and dust it with flour or parchment paper to prevent sticking. Bake the batter in a preheated oven at medium temperature for about 20 minutes, until it turns golden and a toothpick inserted in the center comes out clean.

While the batter cools, you can prepare the filling. Wash and clean the cherries, keeping a few for the final decoration of the cake. Use a blender to puree the remaining cherries until you obtain a fine puree. In another bowl, soak the gelatin in 100 ml of cold water, letting it hydrate for a few minutes. Then, in a bowl over a bain-marie, beat the egg yolks with the milk and sugar, stirring constantly until the cream begins to thicken. Once it reaches the desired consistency, remove the bowl from heat and add the hydrated gelatin, mixing well to ensure it dissolves completely.

After the cream has cooled, carefully fold in the whipped cream and sweet cheese, mixing gently so as not to lose the air in the mixture. Divide the cream into two equal portions; in the first, add the cherry puree, and in the second, the juice and grated lemon peel for a fresh and aromatic taste. Now, it's time to assemble the cake. Place the cooled batter in the cake pan, pouring the layer with cherry puree, followed by the layer with lemon flavor. Refrigerate the cake for 4 hours to set and blend the flavors.

After the time has passed, decorate the cake with the reserved cherries, arranging them beautifully on the surface. You can also add some whipped cream around the cake for an elegant and appetizing look. Serve with pleasure and enjoy the refined taste of this dessert!
