To prepare a delicious cherry cake, we will start by gathering all the necessary ingredients. You will need 4 eggs, 200 g of sugar, 1 packet of vanilla sugar, 100 ml of oil, 200 ml of milk, 300 g of flour, and 1 packet of baking powder. These ingredients are essential for obtaining a fluffy and aromatic cake, and the fresh cherries will add a touch of freshness and a pleasant contrast of acidity.

In a large bowl, beat the eggs with the sugar and vanilla sugar using a mixer or a whisk until the mixture becomes frothy and pale yellow. This is the stage where air is incorporated, and the cake will become fluffy. After achieving a homogeneous mixture, gradually add the oil, continuing to mix to integrate the ingredients well. The oil will provide extra moisture to the cake, making it tastier.

Once the oil is fully incorporated, it's time to add the milk. Pour in one tablespoon of milk at a time, mixing constantly until all the milk is included in the mixture. This will help achieve a fine and velvety texture. Finally, sift the flour mixed with the baking powder, adding it gradually to the mixture. It is important to mix gently so as not to lose the air previously incorporated.

Once the dough is ready, we take care of the baking tray. Grease it with margarine or oil and dust it with flour, or for a simpler result, we can use baking paper. This will prevent the cake from sticking and will make it easier to remove from the tray. Carefully pour the mixture into the tray, ensuring it is evenly distributed.

Now the cherries come in! Do not drain them or coat them in flour, but place them directly on top of the dough, dispersing them evenly. They will be absorbed during baking, providing a delicious filling. Place the tray in the preheated oven at 175 degrees Celsius, or if using a gas oven, on low heat. Bake the cake for about 35-40 minutes, checking occasionally with a toothpick to ensure it is baked.

Once the cake is golden brown and passes the toothpick test, remove it from the oven and let it cool in the tray. When it has completely cooled, dust it with powdered sugar to give it an attractive appearance and extra sweetness. This cherry cake is perfect for any occasion, being easy to prepare and extremely delicious! Serving it alongside a scoop of ice cream or a fragrant tea will surely bring smiles to the faces of your loved ones.
