To prepare a delicious cherry tart with almond cream, you will need a baking dish, preferably glass, with a diameter of about 20 cm. If you do not have a round glass dish, a non-stick pan will work just as well. The first step is to preheat the oven to 190 C (375 F), setting it to medium heat. In the meantime, grease the tart dish with butter, making sure it is evenly coated, then set it aside.

In a pan, add fresh cherries, the chosen liqueur, and the two tablespoons of sugar. Cook the mixture over low heat, stirring constantly to avoid burning, for about 5 minutes. The cherries should become slightly soft and release a delicious juice that will add flavor to the dish. Once the cherries are ready, carefully pour them into the prepared tart dish.

Now, let’s take care of the almond cream. In a bowl, cream the butter together with the ground almonds until you achieve a creamy and smooth mixture. It is important for the butter to be at room temperature for easy incorporation. After you have reached the desired consistency, add the eggs, sour cream, powdered sugar, and almond essence. Mix all the ingredients well until the cream becomes fine and uniform.

Carefully pour the almond cream over the cherries in the tart dish, ensuring it is evenly distributed. Once you are done, place the dish in the oven, positioning it in the upper half. Bake the tart for 20-25 minutes, or until the cream is firm and has a darker golden hue. It is important to monitor the baking process to avoid burning.

Once the tart is baked, remove it from the oven and let it cool on a rack. This step is essential to allow the flavors to develop. When the tart has completely cooled, dust it with the two tablespoons of powdered sugar for an elegant appearance and an extra touch of sweetness. The tart can be served either at room temperature or warm, and each slice will be an explosion of flavor due to the combination of juicy cherries and almond cream.  Ingredients: 350 g pitted cherries, 1 tablespoon cherry liqueur (kirsch) or any other flavor you like (I used orange), 2 tablespoons granulated sugar, 150 g finely ground almonds, 150 g unsalted butter, at room temperature, 3 eggs, 3 tablespoons sweet cream, 200 g powdered sugar (keep 2 tablespoons for dusting the gratin), almond essence (I replaced it with vanilla essence)
