To make a delicious homemade ice cream with a smooth texture, we will start by mixing the eggs with the sugar. In a large bowl, we crack the eggs and add the sugar, then use a whisk or mixer to beat them well until the mixture becomes homogeneous and creamy. Then, we thin the mixture with milk, gradually adding it while continuously stirring to achieve a uniform consistency.

Once we have obtained a liquid composition, we transfer everything into a small pot and place the mixture over low heat. It is important to simmer at a low temperature, stirring constantly to prevent sticking to the bottom of the pot. The cream is ready when it begins to coat the spoon, having a consistency similar to that of a pudding. Once it is ready, we let the cream cool completely.

Meanwhile, we prepare the caramel sugar. In a clean saucepan, we place the sugar and let it melt over medium heat, stirring occasionally until we achieve a beautiful brown color. It is essential to be careful not to burn it, as the bitter taste of burnt sugar can ruin the entire dish. Once the sugar has reached the desired color, we extinguish it with milk and continue to simmer the mixture until the sugar is completely dissolved. We let the caramel cool.

After the egg cream has cooled and the caramel is at room temperature, we combine them in a large bowl. We gently mix with a spatula so that the two preparations integrate perfectly, forming a velvety cream.

Now we take care of the whipped cream. Whipped until firm, it will add an airy and light texture to our ice cream. Once the whipped cream is ready, we add the sour cream for extra creaminess and continue to mix. Finally, we fold the egg cream with caramel sugar into the whipped cream and sour cream mixture, gently stirring to maintain the aeration.

The resulting composition is poured into containers, taking care not to leave air bubbles, and decorated with chocolate flakes for an attractive appearance. The ice cream will be left in the freezer for a few hours, and due to the preparation process, it is not necessary to stir it during that time.

The final result is an extremely creamy ice cream, without any ice crystal traces, and the caramel flavor will be simply divine. We did not add any other essences to preserve the authenticity of the caramel taste! Enjoy every spoonful of this delicacy, perfect for warm summer days!
