Armenian Cake with Nutmeg and Walnuts
To prepare a delicious cake, start by mixing the sugar with the flour, baking powder, and butter. It is important to achieve a crumbly texture, similar to that of a crumble. This will provide the cake with a consistent and flavorful base. If you opt for white sugar, the cake will turn out lighter in color, while using brown sugar will bring darker shades and a deeper taste.
After the dough is well mixed, divide it into two equal parts. One half will become the base of the cake, so you will place it in the greased baking pan lined with breadcrumbs, flour, or baking paper. Press the dough well to form an even and compact base that will support the filling.
In the other half of the crumbly dough, add an egg, which can be replaced with yogurt for a vegetarian option. Also add the milk in which you have dissolved the baking soda and nutmeg. The amount of nutmeg can vary according to your preferences; I used only half a teaspoon, but this ingredient provides a warm and aromatic flavor. Mix the composition with a mixer or a whisk, being careful not to obtain a too fine dough. It is perfect if small lumps remain from the crumbly dough, as they will add texture to the cake.
After you have obtained a softer dough, similar to that for pancakes, pour it evenly over the crumble base in the pan. At this point, you can add walnut pieces, either cut into larger pieces or garnishing with halves on top. These will not only enrich the flavor but will also give the cake a beautiful appearance.
The next step is to place the pan in the preheated oven at 170-180 °C. Bake the cake for 30-35 minutes, but it is good to check with a toothpick, which should come out clean and dry. Personally, I let the cake bake for about 40 minutes to ensure it is perfectly cooked. After baking, it is essential to let the cake cool before cutting and serving it.
