To prepare a delicious apricot cake, we start by carefully washing the apricots, making sure they are clean and fresh. After washing them, we remove the pits and cut them into quarters or halves, depending on their size. Apricots are juicy and fragrant fruits that will add a wonderful flavor to our cake.

In a large bowl, we will begin to mix the egg yolks with the sugar. It is important to mix well until the mixture doubles in volume and becomes creamy. This is the moment when we gradually add the oil, continuing to mix to obtain a homogeneous emulsion. The oil will give the cake a soft and moist texture.

After incorporating the oil, we add the yogurt and mix again until everything is well combined. Now it is time to add the baking powder and flour, which you sift to avoid lumps. Sifting the flour will ensure a fluffy and airy cake, so do not skip this step.

Separately, we will beat the egg whites with a pinch of salt until we obtain a firm foam. It is essential to use a clean and dry bowl to achieve a good foam. Once the egg whites are properly beaten, we will incorporate them into the yolk mixture using a silicone spatula and gentle bottom-up movements to keep the air in the foam.

We prepare a baking tray measuring 24/37 cm, which we grease with margarine and line with parchment paper to prevent the cake from sticking. We carefully pour the mixture into the tray, leveling it evenly. We place the apricot pieces on top, spreading them over the entire surface to ensure a delicious taste in every slice.

We place the tray in the preheated oven at a medium temperature and let the cake bake. It is recommended to do the toothpick test after about 30-35 minutes; if the toothpick comes out clean, the cake is ready. Once baked, we take the tray out of the oven and let the cake cool completely. Finally, we dust it with sugar for an attractive appearance and an extra touch of sweetness.
