Watermelon and raspberry lemonade

Watermelon and raspberry lemonade gets a pulp-free base by straining the watermelon juice, letting the tart taste of lemon and lime come through. The watermelon and raspberries sweeten the drink without making it heavy, and the fruit stays in the glass among the ice cubes. I pour it over plenty of ice, with a mint leaf in each glass. Ingredients
- 500 ml fresh watermelon juice
- 500 ml water
- 4 lemons
- 2 limes
- 25 g sugar or honey (optional)
- 150 g watermelon cubes
- 125 g raspberries
- 10 g mint
- 12 ice cubes
Preparation
1. Juice 4 lemons and 2 limes. Mix the juice with 500 ml water, 500 ml fresh watermelon juice and 25 g sugar or honey, if you want it sweeter. Preparation takes about 10 minutes. 2. Put 150 g watermelon cubes, 125 g raspberries, 10 g mint and 12 ice cubes in a pitcher. Stir and serve; it takes about 10 minutes.
Notes
Choose a ripe watermelon with firm, red flesh; if it’s very watery, the drink won’t taste as intense. Straining it through a fine-mesh sieve catches the fibers, but the small raspberry seeds stay in the glass. After a few tries, I got it as close as possible to the lemonade I had at a restaurant. The base, without the whole fruit, can be mixed ahead and kept chilled; add the mint and ice when you pour the drink. For a change, replace the raspberries with 125 g strawberries, and it still tastes like classic lemonade. I serve it with a simple sandwich.
Frequently asked questions
Can I use frozen raspberries?
Yes, add 100 g straight from the freezer; they’ll chill the drink and soften as they sit in the glass.
What should I do if the watermelon is a little sweet?
Add another 1 tablespoon (15 g) sugar or honey and stir until it dissolves.
Why do raspberry seeds collect in the glass?
They’re small and pass through a fine-mesh sieve; for a drink with fewer seeds, strain the raspberries separately through a finer-mesh sieve.
