Aperol Spritz with prosecco and sparkling water

Aperol Spritz is made from Aperol, prosecco and sparkling water, poured over ice in a large wine glass. It comes out light, with a bitter orange taste and fine bubbles that rise slowly toward the orange slice. I drink it from the same glass I poured it into, with the ice still clinking, and I don't stir it anymore. Preparation: 5 minutes. Cooking: 0 minutes. Total time: 5 minutes. Servings: 1. Ingredients
- 50 ml Aperol
- 150 ml prosecco
- 100 ml sparkling water
- 4 ice cubes
- 1 slice of orange
Preparation
1. Put 4 ice cubes in a large wine glass. 2. Pour 50 ml Aperol over the ice. 3. Add the orange slice to the glass. 4. Pour in 150 ml cold prosecco, taken straight from the fridge. 5. Top up with 100 ml cold sparkling water, from the fridge. 6. Serve right away, while the bubbles are still lively.
Notes
It goes well with green olives and some chips, especially before a meal. Don't make it ahead, because the bubbles fade quickly. If the Aperol tastes too bitter for you, add a little more sparkling water, not more prosecco. If the ice has melted too much, the drink turns watery, so make it with fresh ice. Without alcohol, the prosecco can be replaced with 150 ml pomegranate juice, but the Aperol still contains alcohol.
Frequently asked questions
Can I use spumante instead of prosecco?
Yes, a dry spumante, the same 150 ml, cold from the fridge. A semi-dry one comes out noticeably sweeter, so the taste changes.
What size glass do I need?
A wine glass of about 350 ml holds the 4 ice cubes and the 300 ml of liquid without spilling over.
What amounts do I use if I make the drink for four people?
For four glasses that means 200 ml Aperol, 600 ml prosecco and 400 ml sparkling water, with 4 ice cubes and a slice of orange in each glass.
