To prepare these delicious zucchini and cheese muffins, we start by making sure we have all the necessary ingredients at hand. You will need 200 grams of flour, 100 grams of grated parmesan, 10 grams of baking powder, one medium zucchini, 100 grams of cheese, one glass of milk, one egg, 50 milliliters of oil, salt and pepper to taste.

The first step is to prepare the dry ingredients. In a large bowl, we add the flour, grated parmesan, and baking powder. We mix the ingredients well with a spatula or whisk, so they combine evenly. The parmesan will add a rich flavor and a pleasant texture to the muffins, while the baking powder will ensure perfect rising.

Meanwhile, we prepare the zucchini. It needs to be grated on a large grater. It is important to choose young zucchinis, as they have a milder flavor and are juicier. After grating it, we leave it for a few minutes in a clean towel to remove excess water. This step is essential to avoid the muffins becoming too wet.

In another bowl, we add the milk, beaten egg, and oil. We mix these ingredients well to obtain a homogeneous mixture. It is time to add the dry ingredients, gently folding with a spatula until incorporated. Finally, we add the grated zucchini and diced cheese, mixing again to evenly distribute the ingredients in the batter.

Now we prepare the muffin molds. We grease each mold with a little oil and dust them with flour to prevent sticking. We pour the batter into each mold, filling them about 2/3 of the way, to leave room for the muffins to rise during baking.

The oven should be preheated to 180 degrees Celsius. We place the muffin molds in the oven and let them bake for about 25 minutes, or until they turn golden and pass the toothpick test. When they are ready, we take the muffins out of the oven and let them cool slightly before removing them from the molds.
