The offal is a delicacy appreciated in many kitchens, and the dish we propose today is a savory and hearty recipe, perfect for festive meals or even for a more special dinner.

We start by preparing the offal, which we cut into suitable pieces. It is very important to wash them well to ensure that we remove any impurities. Once we have cleaned them, we quickly blanch them in a pot of boiling water, after which we boil them in a mixture of water with salt, bay leaves, and peppercorns, which will add a flavorful taste. We let them boil until well cooked, and then we let them cool down. After they have cooled, we can chop them either with a meat grinder or manually with a knife. Personally, I like to chop them with a knife, as I achieve a more pleasant texture.

In a large frying pan, we finely chop the onion and garlic, then sauté them in lard, which gives the dish a special flavor. If you prefer, you can also use oil, but the taste will be different. We add the chopped offal and let them sauté together with the onion and garlic for a few minutes, making sure to stir constantly to prevent sticking to the bottom of the pan. In the end, we season with salt and pepper to taste.

After we finish sautéing the mixture, we take the pan off the heat and let it cool a bit. At this point, we add the four beaten eggs with a little salt and freshly washed and finely chopped greens. This will bring an extra freshness and color to the dish.

The lard is used to grease the baking dish, which we will sprinkle with mustard seeds, which will give a special taste to the meatloaf. We line the dish with pancakes, making sure to cover all corners. We keep two pancakes to use at the end. We place half of the offal mixture in the tray, pressing lightly to create an even base. Then, we add the boiled and peeled eggs, arranging them in a line, and on top, we add the rest of the mixture. We cover everything with the last pancakes.

To finish, we pour the two beaten eggs with a little salt on top and sprinkle with grated cheese and a little chopped fresh dill, which will add an extra flavor. We preheat the oven and put the meatloaf in the oven, letting it bake for about 30 minutes. When it is ready, it should have a golden, appetizing crust. We let the meatloaf cool in the tray, and then we turn it out onto a platter. This dish will surely impress with its appearance and its rich and savory taste. Enjoy your meal!

1 kg of lamb offal, kid, or chicken - depending on preferences, 3 dried onions, 4+2 raw eggs, 4 boiled eggs, 150 g of lard, 5 bunches of fresh dill, 5 bunches of fresh parsley, 3 bunches of green onions, 3 bunches of green garlic, salt, ground pepper, 10 peppercorns, 2 bay leaves, 10 thin and unbrowned crepe sheets, 100 g of cheese, 1 tablespoon of mustard seeds.
