If the dough seems too thick, do not hesitate to thin it out with a little milk to reach the desired consistency.
Now, let's get cooking! Heat a non-stick pan over medium heat. Add a little oil and let it heat up well. It is very important that the pan is well heated to achieve an even browning. Pour a ladle of dough into the pan, gently rotating it to form a thicker pancake. Leave it on low heat to cook, checking the edge of the pancake periodically. When they start to turn golden, carefully flip them over to the other side.
On half of the surface, add 1-2 teaspoons of the desired filling. Here you can use cheese, sautéed vegetables, or even meat, depending on your preferences. Then fold the dough in half, forming a semicircle, and continue frying on low heat for another 5 minutes, flipping them halfway through for even browning. Be careful not to tear or spill the filling, as these pancakes are very delicate.
Repeat this process until you have finished all the dough and filling. Finally, let the pancakes cool slightly before serving.
