Braised cabbage with soy sauce

Braised cabbage with soy sauce softens in the saucepan and releases its juices, which cook down as the ribbons become tender. Tomato paste and thyme round out the flavor, while a little Tabasco adds heat that you can adjust to taste. I like it with pork and use plenty of Tabasco, so the contrast with the soy sauce comes through. Prep: 15 minutes. Cook: 28 minutes. Rest: 20 minutes. Total time: 63 minutes. Serves: 4. Approximately 135 kcal and 4 g protein per serving.
Ingredients
- 1 kg fresh cabbage
- 2 teaspoons oil
- 1 teaspoon salt
- 1 sprig fresh thyme (2 g)
- 2 tablespoons tomato paste
- 2 tablespoons soy sauce
- 1/4 teaspoon ground white pepper
- 1/4 teaspoon Tabasco sauce (optional)
Preparation
1. Shred the cabbage, sprinkle it with 1 teaspoon of salt and leave it for 20 minutes. Squeeze out the liquid well. 2. Heat 2 tablespoons of oil in a saucepan, then add the cabbage and the thyme sprig. Cook over medium heat for 25 minutes, stirring from time to time, until the cabbage softens and the liquid cooks down. 3. Add the tomato paste, soy sauce, white pepper and, if you like, Tabasco. Stir and cook for 3 more minutes, until the sauce coats the cabbage.
Notes
Keep the cabbage in a covered container in the fridge for up to 3 days; you can reheat it directly in a saucepan over low heat. Choose a compact head that feels heavy for its size, with firm leaves and no soft spots. Wider strips, about 1 cm, stay firmer and need a few minutes longer than very finely cut ones. If the cabbage is particularly juicy, leave it uncovered a little longer, until the sheen of liquid at the bottom of the saucepan disappears. Soy sauce can already be quite salty, so taste before adding more salt. Regular soy sauce may contain gluten; for a gluten-free version, use 2 tablespoons of certified gluten-free tamari. The whole sprig is easy to remove before serving, and the leaves left on the cabbage give it their aroma. Serve it alongside pork as a side dish.
Frequently asked questions
Can I use red cabbage?
Yes, but let it cook for about 30 minutes, until tender; then add the sauces.
Why is the cabbage still firm?
Thicker strips may need another 5 minutes over low heat. Stir and check the texture again.
Can I use sauerkraut?
Yes. Use 1 kg, rinse it and squeeze it well, then don’t add any more salt to the saucepan; cook it for about 15 minutes.
How do I stop it sticking to the bottom of the saucepan?
Stir every 3 minutes and lower the heat if the cabbage starts sticking before it softens.
