Simple Sorrel Soup
We start by preparing a delicious and comforting soup, perfect for cool days. The first step is to sauté the finely chopped onion in a pan with melted butter. It is essential to ensure that the onion softens well, as it will add a sweet and rich flavor to our soup. Once the onion becomes translucent and slightly golden, we add the diced potatoes. We continue to sauté the onion and potatoes together, stirring occasionally, until the potatoes become glassy. This stage is crucial as it helps to intensify the flavors.
Once the potatoes are ready, we add the sorrel leaves and lettuce, which will provide a fresh and vibrant note to the soup. We let the vegetables cook, stirring continuously, until the leaves start to soften and release their aroma. It is time to pour warm water into the pan, bringing everything to a gentle boil. We let it simmer for about 10 minutes or until the vegetables are fully cooked and tender.
