Potato soup with smoked sausage

Sour cream and flour are mixed until smooth before they go into the potato soup, which then simmers until thickened. The potatoes, vegetables and smoked sausage make a thick broth, almost like a potato stew with a little more liquid; I don’t eat much soup, but this is one of my favourites. I choose potatoes that stay whole on the plate. Prep: 20 minutes. Cook: 41 minutes. Rest: 15 minutes. Total: 76 minutes. Serves: 4. About 350 kcal and 7 g protein per serving.
Ingredients
- 1 large onion (200 g)
- 2 tablespoons oil (30 ml)
- 25 g smoked sausage
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon paprika
- 1 tablespoon pepper paste
- 1 medium carrot (100 g)
- 2 small parsley roots (100 g)
- 1000 ml water
- 3 large potatoes (750 g)
- 100 ml tomato passata
- 1 tablespoon flour (15 g)
- 4 large tablespoons sour cream (100 g with a minimum of 20% fat)
- 15 g parsley
Preparation
1. Take the sour cream out of the fridge 15 minutes ahead. Finely chop the onion and cut the sausage into small pieces. Heat 2 tablespoons of oil in a pot and sauté 1 onion, the sausage, 1 teaspoon of salt, 1/2 teaspoon of pepper, 1 teaspoon of paprika and 1 tablespoon of pepper paste for 5 minutes, until the onion softens. 2. Thinly slice the carrot and parsley roots and add them to the pot. Sauté for 1 minute, then pour in 250 ml water and simmer for 5 minutes. 3. Peel the potatoes, cut them into pieces and add them along with 750 ml water. Once it comes to a boil, simmer the soup over low heat for 15 minutes. Pour in 100 ml tomato passata and simmer for another 5 minutes, until the potatoes are tender. 4. Mix 1 tablespoon of flour with 4 large tablespoons of sour cream. Gradually stir in a few spoonfuls of hot soup, then pour the mixture into the pot, stirring. Chop the parsley, add it and simmer for another 10 minutes over low heat.
Notes
Serve bread alongside the bowl so you can mop up the thick broth too. Yellow potatoes hold their shape better; floury potatoes break down faster and may need a few minutes less cooking time. Smoked sausage can vary a lot in saltiness, so taste the soup before adding more. It keeps in the fridge for up to 3 days, and you can pour in a little water when reheating if it has thickened. You can leave out the sausage; the soup contains gluten and dairy.
Frequently asked questions
Can I use red-skinned potatoes?
Yes, they hold their shape well. If they’re still firm after the cooking time, simmer them for another 3-4 minutes.
What should I do if the soup is too salty?
Pour in 100 ml hot water and simmer the soup for another 2 minutes, then taste it again.
Why are there still lumps in the sour cream mixture?
Whisk 30 ml hot soup into the mixture before pouring it into the pot.
How can I thicken the soup if it’s too thin?
Mash 2-3 pieces of potato against the side of the pot and simmer the soup for another 2 minutes.
