To prepare a delicious chicken thigh soup, we start by cleaning the chicken thighs, which will be thoroughly washed under a stream of cold water, ensuring they are clean. Then, we place them in a large pot with cold water, making sure to cover the meat well. We turn on the stove to medium heat and let it reach the boiling point. At this moment, a foam will form on the surface, which we will remove with a skimmer to obtain a clear and tasty soup.

In the meantime, we take care of the vegetables. The onion is peeled and finely chopped, the carrots are peeled and diced, and the parsley root and celery are prepared in the same way. The bell pepper is cleaned of its core and also diced. After the thighs have boiled halfway, we first add the onion to the pot, letting it sweat a little, then we add the carrots, parsley root, and celery, and finally, the bell pepper. These vegetables will add flavor and color to the soup.

We let everything simmer on medium heat, stirring occasionally. When the vegetables are almost cooked, we add the noodles, which will give a nice appearance and a savory texture to the soup. We let it boil for about 10 minutes or until the noodles are al dente. After this time, we add the jarred vegetables, which will provide an extra flavor and intensify the taste of the soup.

After adding the jarred vegetables, we let the soup boil for another 5 minutes. At this point, we can season the soup with salt and pepper to our taste, making sure to taste constantly to achieve the perfect balance of flavors. We add the tomato paste, which will bring a note of acidity and an attractive color, and finally, the fresh parsley leaves, which will enrich the soup's aroma.

To finish the dish, we add the borscht, which will give the soup a pleasant acidity and a specific flavor. We let it boil for another 5 minutes, then we can prepare for serving. This soup is served hot, perfect for chilly days. It can be accompanied by hot peppers, which will add a touch of spiciness, transforming this dish into a comforting and flavorful meal.
