Ciorbă de perișoare with beetroot and vegetables

Ciorbă de perișoare with beetroot and vegetables, a Romanian meatball soup, is served hot at lunchtime, with red broth and soft vegetables. The rice meatballs and cooked beetroot give it the distinctive flavor of a heartier vegetable soup; I really liked how the broth takes on its color and recommend it warmly. I add the sour cream to my bowl so the broth keeps its clear red color. Prep: 20 minutes. Cook: 50 minutes. Total time: 70 minutes. Servings: 4. Ingredients
- 1 medium red onion (150 g)
- 2 carrots (150 g)
- 2 tablespoons olive oil
For the meatballs
- 500 g ground pork and beef
- 15 g rice
- 1 egg
- 1/2 teaspoon dried thyme
- 2000 ml water
- 2 medium potatoes (300 g)
- 2 small zucchini (400 g)
- 2 tomatoes (250 g)
- 2 1/2 tablespoons tomato paste
- 1 teaspoon Vegeta
- 1 teaspoon dried lovage
- 1/4 teaspoon ground white pepper
- 1 teaspoon Borș Magic
- 2 medium cooked beetroot (300 g)
- 15 g fresh parsley
- 100 g sour cream
Preparation
1. Finely chop the red onion and cut the carrots into rounds or cubes. Heat the olive oil in a pan and sauté the onion and carrots for 5 minutes, until they soften slightly. 2. Mix the ground meat well with the rice, egg and thyme, then shape into meatballs. 3. Put 2000 ml of water, the sautéed onion and carrots, the peeled and cubed potatoes, and the meatballs in the soup pot. Bring to a boil in about 10 minutes. 4. Simmer over medium heat for 25 minutes, until the potatoes are tender and the meatballs are cooked through. 5. Peel the zucchini and cut into rounds. Dice the tomatoes, then add them to the pot along with the zucchini, tomato paste, Vegeta, dried lovage, white pepper and Borș Magic. Boil for 8 minutes, until the zucchini soften. 6. Dice the cooked beetroot and add it to the soup for the last 2 minutes. Turn off the heat and add the chopped parsley. Serve with sour cream.
Notes
Plain cooked beetroot, without vinegar, keeps the soup’s flavor clean; pickled beetroot makes it sour and gives it a deeper color. For the meatballs, ground meat with a little fat is easier to shape than very lean meat, and short-grain rice binds the mixture well. If the tomatoes are watery, let the soup simmer gently for a little longer before adjusting the seasoning. It keeps covered in the refrigerator for up to 3 days; when reheating, it needs a little water, since the rice thickens the broth. Serve bread alongside and leave the sour cream separate so everyone can add as much as they like. Zucchini can be replaced with the same amount of ordinary courgettes; the egg in the meatballs is the allergen to be aware of.
Frequently asked questions
Why do the meatballs fall apart?
If the mixture seems too soft, add another 1 tablespoon of rice and leave it for 10 minutes to absorb the moisture.
Can raw beetroot be used?
Yes. Peel it, cut it into cubes and add it to the pot at the beginning; it needs about 25-30 minutes to soften.
What meat can I use if I don’t have a pork and beef mix?
You can use 500 g of ground pork. The meatballs will be a little fattier than those made with the mix.
