When I start making boiled Mucenici from Muntenia, it’s usually on an ordinary day; I don’t necessarily wait for March 9th. I always have a bag of dried Mucenici on hand, so there’s no need for special planning. I like that I can make them without too much hassle, and the ingredients are simple—nothing fancy. Basically, I just boil them, and towards the end, I add what gives them all the flavor: a splash of rum, lemon zest, walnuts, and cinnamon.

Quick Info

Total Time: about 30 minutes
Preparation Time: 5 minutes
Boiling Time: 20-25 minutes
Servings: 4-6
Difficulty: easy
Recipe Type: traditional dessert, vegan (if using non-alcoholic rum)

Ingredients

2 liters of water
1 bag (200 g) dried Mucenici (pasta type)
3 tablespoons of sugar
salt to taste
1 capful of rum (for flavor, optional)
lemon zest (preferably untreated)
walnuts (chopped or ground, as preferred)
cinnamon (optional, to taste)

Preparation Method

1. Bring the water to a boil in a large pot. I use a 3-liter pot so the Mucenici have enough space to boil comfortably.

2. Add the sugar and a pinch of salt to the water. I stir them and wait for it to start boiling.

3. When the water is boiling, I pour the dried Mucenici into the pot. I do this in a light rain, so they don’t stick together. I make sure to stir a few times at the beginning.

4. I let the Mucenici boil over medium heat for about 10-12 minutes, or until they soften and start to become slightly translucent. I check the instructions on the bag if I'm unsure about the timing.

5. Once the Mucenici are cooked, I turn off the heat. Now I add a capful of rum, grated lemon zest, ground walnuts, and cinnamon, all to taste. I don’t add too much lemon zest, just enough to feel the aroma.

6. I mix everything and let the Mucenici sit for 2-3 minutes to combine the flavors. If I want them sweeter, I add a little more sugar at the end.

Why I Make This Recipe Often

It’s very quick, I don’t need complicated ingredients, and I can adjust the flavors as I like. Boiled Mucenici are great while warm, but they don’t become heavy even if I let them cool. I never have leftovers for the next day.

Tips and Variations

Tips

Don’t add all the sugar at the beginning if you don’t want them too sweet; you can taste and adjust at the end.
If you want the walnuts to stay crunchy, add them directly to the plate, not to the pot.
Salt enhances flavor, even if it doesn’t seem like it.
Lemon zest adds freshness, but don’t overdo it.
Mucenici absorb water, so don’t leave the pot on the heat too long after boiling.

Substitutions

Rum can be omitted or replaced with rum essence.
You can use brown sugar instead of white sugar; the taste will be slightly different.
Cinnamon is optional; some people use vanilla or skip it altogether.

Variations

Some add raisins or a bit of grated orange, but the basic recipe doesn’t require them.
For a guaranteed vegan version, use non-alcoholic rum essence.

Serving Ideas

I serve them warm, straight from the pot. Sometimes I sprinkle a bit of walnuts and cinnamon on top right before serving. If they become thicker after cooling, they can be diluted with a little hot water.

Frequently Asked Questions

1. Can homemade Mucenici be used?
Yes, but the boiling time may vary. I recommend boiling them until they are soft but not mushy.

2. How much sugar should I add if I don’t want them too sweet?
You can start with two tablespoons and add more to taste at the end.

3. Do I need to rinse the Mucenici beforehand?
No, dried pasta-type Mucenici do not need to be rinsed before boiling.

4. Can I keep them for the next day?
The texture changes quite a bit; the Mucenici absorb liquid and become thicker. It’s better to make them fresh.

5. What kind of walnuts should be used?
Romanian walnuts work best, either ground or chopped, fresh.

Nutritional Values

Approximately, a medium serving (about 350 ml) has around 200-250 kcal. Most of the calories come from the pasta (Mucenici) and sugar. Approximately: carbohydrates 40-45 g, fats 5-7 g (from walnuts), proteins 4-5 g. These values are estimates and vary based on the amount of walnuts and sugar used.

Storage and Reheating

Boiled Mucenici don’t keep well overnight because they absorb liquid and become very thick. However, if you want to keep them for a day in the fridge, place them in a covered container, and when reheating, add a little hot water to thin them out. Still, the best texture and taste are shortly after making them.
