Summer mushroom stew with vegetables

Season - Summer mushroom stew with vegetables by Denisa F. - Recipia

Summer mushroom stew with vegetables is usually served on fasting days, with vegetables and tomato sauce. The peppers, carrot and onion soften in the sauce, while the boiled mushrooms stay in pieces among the vegetables. I keep them in fairly large pieces because I like to taste them separately from the soft vegetables in the sauce. Preparation: 20 minutes. Cooking: 32 minutes. Rest: 10 minutes. Total time: 62 minutes. Serves: 4. About 210 kcal and 10 g protein per serving.

Ingredients

  • 1 kg boiled summer mushrooms
  • 2 medium onions (300 g)
  • 1/2 carrot (40 g)
  • 3 tablespoons oil
  • 1 medium kapia pepper (150 g)
  • 1 medium yellow pepper (150 g)
  • 375 ml water
  • 2 large tomatoes (360 g)
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 tablespoon tomato paste
  • 45 ml red wine
  • 1 teaspoon dried parsley
  • 1 garlic clove

Preparation

1. Peel and finely chop the onions. Peel the carrot and cut it into julienne strips, remove the seeds from the peppers and cut them into pieces, then peel the tomatoes and dice them. Cut the boiled and cooled mushrooms into bite-size pieces. 2. Heat the oil in a saucepan. Add the onion and carrot and cook gently for 5 minutes, until softened. 3. Add the peppers and cook for another 3 minutes, then pour in 375 ml water. Cover the saucepan and let the vegetables simmer for 12 minutes. 4. Add the tomatoes, mushrooms, salt and pepper. Simmer for another 10 minutes, until the vegetables are tender and the sauce has reduced. 5. Stir in the tomato paste, red wine and dried parsley. Leave the saucepan on the heat for 2 more minutes, then take it off the heat and add the peeled and crushed garlic. Cover and leave the dish to stand for 10 minutes.

Notes

It can be made a day ahead; keep it in a covered container in the fridge and eat it within 3 days. The wine boils for just 2 minutes, so for an alcohol-free version, replace the 45 ml with the same amount of water. A friend who had been out picking brought me my mushrooms; there were about four varieties, and I didn't know their names. Wild mushrooms must be positively identified before they reach the kitchen. Different varieties can have different textures, and thick pieces soften more slowly than thin ones. Let the boiled mushrooms drain well, because water left between the caps can thin the sauce. If the tomatoes are very juicy, the sauce needs a few extra minutes to thicken. Serve with fresh bread, for mopping up the sauce.

Frequently asked questions

Can I mix different varieties of mushrooms?

Yes, as long as each variety has been positively identified and is edible. Cut large pieces to about 3 cm so they cook more evenly.

Can I use fresh mushrooms instead of boiled ones?

Yes, boil them separately and leave them to drain for 10 minutes before cutting them. Use 1 kg weighed after boiling and draining.

Can I replace the dried parsley with fresh parsley?

Yes, use 1 tablespoon chopped fresh parsley instead of the teaspoon of dried parsley.
