Welcome to the world of culinary delights! Every year, when local fruits and vegetables make their appearance, I feel inspiration urging me to prepare delicious sweets as well as fresh salads full of vitamins. On hot days, when time seems to pass faster and appetite decreases, quick recipes become essential. So, let's discover together a delicious salad recipe that is not only easy to prepare but also extremely healthy.

We start by washing the peppers well, ensuring that we remove any trace of dirt. After cleaning them, we can roast them. We can either choose to put them in the oven on a baking tray lined with parchment paper or opt for a more traditional method, roasting them directly over the flame of the stove. Regardless of the method chosen, the goal is to achieve a nicely browned skin that will add a special flavor to our salad. Once they are well roasted, we transfer them to a large bowl, covering them with a lid or plastic wrap to steam. This step is essential, as the steam will help them soften, making peeling easier.

After a few minutes, when the peppers have cooled a bit, we can peel them and remove the stem, including the seeds. We then cut them into thin strips, preparing them to be combined with the other ingredients. The next step is to take care of the tomatoes. They need to be washed well and then cut either into slices or cubes, depending on preference. Fresh tomatoes bring a sweet-sour taste that will perfectly complement the flavors of the peppers.

Next, we turn our attention to the olives, which we slice into thin rounds. The cheese, whether feta, telemea, or any other type you prefer, is cut into small cubes to easily integrate into the salad. Now it’s time to add the finely chopped greens, which will bring a note of freshness. It is ideal to use parsley, dill, or basil, depending on personal taste.

After adding all the ingredients to a large salad bowl, it’s time to adjust the flavor. We sprinkle salt to taste, drizzle high-quality olive oil, and, depending on preference, a little balsamic or apple vinegar. These not only add flavor but also help preserve the salad.

Let the flavors sit for a few minutes, then enjoy this delicious salad, which is perfect as an appetizer or even as a main course. It is a hearty and filling choice, ideal for hot summer days. I wish you good appetite and much success in cooking!
