To prepare a delicious and healthy dish, we will start with the main ingredients. The tomatoes, the stars of this dish, are a source of vitamins and antioxidants. Choose well-ripened tomatoes with a sweet-sour taste, ideal for a savory paste. Therefore, the tomatoes are thoroughly washed under a stream of cold water, then passed through a tomato grinder, resulting in a smooth paste rich in flavors.

In parallel, we take care of the bell peppers. They are cleaned of seeds, and their pulp is cut into smaller pieces to facilitate the chopping process. Using a food processor or a meat grinder, the bell peppers are transformed into a fine paste that will enrich the dish with a sweet and crunchy note. It is important to ensure that the texture is uniform, to achieve a homogeneous mixture.

The greens, such as parsley, dill, and basil, bring freshness and an irresistible aroma. They are washed and finely chopped, using a sharp knife or a food processor, to keep all the flavors intact. The vibrant green color will add a touch of vitality to our dish.

Once all the ingredients are prepared, in a large pot, combine the tomato paste, chopped bell peppers, and greens. Add salt to taste, which will not only enhance the flavors but also help with preservation. You can also add salicylic acid, a natural preservative, to extend the shelf life of the dish. Mix all the ingredients well, ensuring that the salt and salicylic acid are evenly distributed throughout the composition.

After obtaining a homogeneous mixture, it is time to deal with the jars. They need to be sterilized, so wash them well and let them boil in water for a few minutes. Once the jars have cooled, fill each jar with our mixture of tomatoes, bell peppers, and greens, leaving a little space at the top for expansion. Then, seal with the lid and carefully place them in the pantry, in a cool, dark place, where they will be stored to delight us with their taste throughout the year. The dish is now ready to become part of our meals, bringing a touch of flavor and warmth to every plate.
