To make a delicious fruit peel jam, the first step is to carefully choose the ingredients. Select citrus peels, such as oranges, lemons, or grapefruits, ensuring they are well washed and free of blemishes. Healthy cores are also essential for adding flavor and consistency. Once you have prepared all the ingredients, place the peels and cores in a large pot. Add enough water to completely cover them and put it on low heat. This is when the peels will start to release their characteristic aromas, and your home will fill with the fresh scent of citrus.

After about 30-40 minutes of boiling, when the peels become soft and the water has reduced, you can prepare a straining tool. Use a fine sieve to separate the peels from the liquid. Now, transfer the strained peels back into the pot and put them on low heat again. Add the freshly squeezed juice of a lemon. This ingredient will not only enhance the flavor but will also help preserve the jam.

When the mixture starts to boil, it’s time to add the sugar. The amount of sugar can vary depending on personal preferences, but a common ratio is 1 kg of sugar for every 1 kg of fruit peels. Stir well to ensure that the sugar dissolves completely. Let the mixture simmer on low heat, stirring occasionally to prevent sticking to the bottom of the pot. It’s important to ensure it cooks evenly.

To check if the jam is ready, you can use the classic method: put a drop of jam on a cold plate and let it cool for a few seconds. Then, tilt the plate; if the jam doesn’t run and has a gelatinous consistency, it’s ready. Once you have achieved the desired texture, remove the pot from the heat and prepare the jars. They should be clean and sterilized, either by boiling or washing in the dishwasher at maximum temperature.

Fill the jars with warm jam, being careful to leave a little space at the top of the jar for expansion. Seal them well and let them cool completely. Store them in a cool, dark place where they can be kept for a long time. This jam will add a touch of freshness and flavor to any dessert or can simply be enjoyed on a slice of toast, bringing a smile to anyone who tastes it.
