Oat bran diet pizza

Oat bran diet pizza is served hot as a main course, with a crust made from oat and wheat bran and boiled chicken breast. The crust stays thin, with lightly browned edges, and the cheese and ketchup melt on top with thyme and basil. I spread the ketchup in a thin layer so it doesn’t cover up the bran. Preparation: 20 minutes. Cooking: 120-129 minutes. Total time: 140-149 minutes. Serves: 3. Approximately 540 kcal and 57 g protein per serving.
Ingredients
- 250 g chicken breast
- 1500 ml water
- 6 eggs
- 12 tablespoons wheat bran
- 12 tablespoons oat bran
- 6 teaspoons dry yeast
- 1 teaspoon salt
- 45 g light ketchup
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 15 black olives
- 180 g drained jarred mushrooms
- 1 roasted pepper (120 g)
- 150 g drained corn
- 150 g reduced-fat cheese
Preparation
1. Pat the chicken breast dry with paper towels. Put it in a pot with 1500 ml water and boil for 1 hour, until the meat is cooked through. Take it out and drain it. 2. In a bowl, mix 6 eggs with 12 tablespoons wheat bran, 12 tablespoons oat bran, 6 teaspoons dry yeast and 1 teaspoon salt. Divide the mixture into 3 equal portions. 3. Cut the cooked chicken breast and roasted pepper into pieces. Drain the mushrooms and corn, then slice or cut the 150 g reduced-fat cheese into pieces. Mix 45 g light ketchup with 1 teaspoon each of dried thyme and dried basil. 4. Heat the oven to 200°C. Spread one portion of the mixture in a round shape on a baking tray lined with baking paper. Bake the crust for 8 minutes, until set and lightly browned around the edges. Repeat with the other two portions. 5. Spread the herbed ketchup over each crust and divide the chicken, 15 black olives, mushrooms, roasted pepper, corn and cheese on top. Bake each pizza for 12-15 minutes, until the cheese has melted and the edges are browned.
Notes
Serve with a green salad and a simple vinegar dressing; the slices already get salt from the olives and cheese. Drain the jarred mushrooms and corn well, and if the roasted pepper has released a lot of liquid, pat it dry before putting it on the crust. Choose a reduced-fat cheese that melts, not a dry, crumbly one. Store leftover pizza covered in the fridge for up to 3 days; reheat the slices in the oven so the base doesn’t go soft. You can replace the reduced-fat cheese with 150 g reduced-fat mozzarella. Wheat bran contains gluten, and eggs and cheese are allergens.
Frequently asked questions
Why doesn’t the crust rise like regular dough?
The mixture goes straight into the tray, with no rising time. For each crust, use 2 eggs and 4 tablespoons of each type of bran.
Can I use fresh mushrooms instead of jarred ones?
Yes, use 180 g sliced mushrooms and cook them in a pan for 5-7 minutes, until the liquid evaporates.
Can I use raw pepper instead of roasted pepper?
Yes, cut 100 g raw pepper into thin slices and divide it over the crusts.
