Fish rolls with wine and saffron sauce
We start preparing this delicious recipe by preparing the onion and garlic mixture. Heat a pan over medium heat and add a little olive oil. When the oil is hot, add a finely chopped onion and a few crushed garlic cloves. Sauté them until they become translucent, being careful not to burn them, in order to preserve the delicate flavors. Once the onion and garlic are ready, add the peeled shrimp, seasoning with salt and pepper to taste. Sauté for a few minutes until they turn pink and slightly crispy, being careful not to overcook them, as they can become tough.
After the shrimp are ready, transfer the mixture to a food processor. Add the crab meat, diced smoked salmon, a raw egg, finely chopped dill, and a dash of salt and pepper. Pulse everything until you achieve a homogeneous composition, similar to mousse. Make sure all the ingredients are well integrated and that the texture is smooth, to obtain the ideal filling.
Next, prepare the fish fillets that you will fill. Season the fillets with salt and pepper on both sides, then take a tablespoon of the crab and shrimp filling and spread it evenly over each piece of fish. Roll the fillets, being careful not to squeeze them too tightly, to allow the filling to expand during cooking. Place the rolls in a greased baking dish and pour around the mixture of broth and wine, which will add extra flavor. Cover the dish with aluminum foil and place it in the oven for 20-25 minutes at medium heat.
In the meantime, you can prepare the wine and saffron sauce. In a saucepan, put 300 ml of white wine along with 5 peppercorns, the stems from a few sprigs of dill, thyme, and half a finely chopped onion, plus a crushed garlic clove. Simmer over low heat until the liquid reduces to one third of its volume. Add the liquid cream and season with salt and pepper. Let it boil, stirring constantly, until the sauce thickens. Finally, incorporate the butter, one teaspoon at a time, stirring until completely melted. Add a pinch of saffron powder for color and flavor.
To complete this dish, you can prepare a tomato and garlic sauce. Mash a few garlic cloves with salt and oil, then add the peeled and finely chopped tomatoes. Process everything in a food processor and strain the resulting puree to obtain a fine sauce, which will add a pleasant contrast to the rich taste of the fish.
Now everything is ready to be served. The fish rolls stuffed with crab and shrimp, along with the wine and tomato sauces, will create an elegant and flavorful meal, perfect for a special occasion or a family dinner. Enjoy this delicious recipe and savor every bite!
