Fresh spinach is a versatile and nutrient-rich ingredient, and when combined with goat cheese and other flavors, it transforms into a delicacy that you can enjoy on various occasions. The first step is to wash the spinach well under cold running water, making sure to remove any impurities. After draining, finely chop it into thin strips so that it perfectly integrates into your filling. In a bowl, mix the chopped spinach with goat cheese, a whole egg, an egg white, sour cream, grated cheese, a pinch of salt, pepper, and finely chopped green onion. Mix all the ingredients well to obtain a homogeneous and flavorful composition.

The next step is to roll out the puff pastry on a clean work surface. This sheet of dough is the perfect base to bring your dish to life. If you want to give it a palm shape, draw an imaginary line down the middle of the dough, then add the filling over almost the entire surface, leaving one centimeter free in the middle. Roll each edge towards the center, and where they meet, brush with a mixture of egg yolk and milk to ensure a good seal. Cut the dough into rounds about 1.5-2 cm wide and place them on the baking tray, with the cut side facing horizontally.

If you prefer the snail shape, spread the filling evenly over the entire surface of the dough, leaving one centimeter on one side to close it. Brush the edge well with egg yolk, then tightly roll the dough, pressing gently to stick. Cut the dough into rounds of 1.5-2 cm and place them in the tray, again with the cut side in a horizontal position.

To achieve a golden and crispy crust, brush the sides and the opening with the egg and milk mixture. Then, bake them for about 25-30 minutes at 180ºC, using only the bottom function, and in the last 5 minutes, activate the top heat to achieve an even color. If you want to add an extra flavor, you can sprinkle fresh dill in the mixture or add a bit of cheese on top in the last moments of baking. Your dish will be not only tasty but also visually appealing, ready to impress anyone. Enjoy your meal!

500-700 g of puff pastry, 150 g of goat cheese, 1 green onion, 1 egg and one egg white, 2 tablespoons of thick sour cream, 50-100 g of grated cheese, a handful of spinach, salt, and pepper to taste. For brushing: 1 egg yolk, 2-3 tablespoons of milk.
